Do differently: Just keep ABV high.
Recipe: OG: 1056 FG: 1018 ABV: 5%
Achieved: OG: 1054 FG: 1014.5 ABV: 5.2%
Notes:
- First brew with new kettle and "rolling" boil feature. Led to about 3 litres more beer.
- Second attempt at recipe. Undershot ABV before but still forgot the Chocolate and no Sodium Chloride (salt) this time. Plus added all chems to Sparge as well as to mash by mistake. Which I think I can taste.
- Don’t forget choc. No coffee beans. And try a really good yeast?
Do again: Not my style but yeah, good to have a stout in the shed. |

Notes: Under shot. Nice but a bit thin. Hoppy with a true bitterness. Too carbonated.
Do again: Naah. Average recipe. IPA just not my favourite. Maybe would of been better if I'd hit ABV. But not as good as my first IPAs. |

Aroma: Nelson: Pepper. Clove. Acid. Alcohol.
Aroma: Northern: Unique woody, minty.
Do differently: Less ABV.
Recipe: OG: 1059 FG: 1006 ABV: 7%
Achieved: OG: 1062 FG: 1004 ABV: 7.6%
Notes:
- Elusive Brewing. The finished beer is typically dry and the combination of the hop profile and yeast esters bring a fruity quality. A combination of Maris Otter and Pilsner malt provide the base but Vienna and Munich also feature heavily to help balance the dryness of the high attenuation.
- Alcohol way too high, too strong taste. And the yeast has alcohol as a flavour too.
Do again: Never say no. Dry hopping nightmare. Hops were big but not my thing. Yeast high attenuation meant very dry. Not my fave Saison. BUT it grew on me and…Brew Club really liked it… |

Aroma: Slightly fruity, easters and neutral.
Do differently: As ever the high ABV helped.
Recipe: OG: 1061 FG: 1021 ABV: 5.25%
Achieved: OG: 10664 FG: 1018 ABV: 6.3%
Notes:
- Ridiculously weirdly carbonated. Fizzed like coke then totally flat in under 5 seconds.
- Online recipe. Imperial Yeast A10 Darkness recommended. Also, after a week add 800ml made coffee and Jarrylo hops. Didn’t do either.
- Subtle coconut taste, I think that’s good.
- Will try dedicated coconut next time?
- Didn’t grind beans. Next time.
Do again: Another recipe yes. Liked it. And I’d love to nail it. The carbonation was ok but head retention was zero. |

Notes:
- Robs English ESB. A classic British ESB, with lots of malt taste and classically hopped with East Kent Goldings.
- I swapped hops for Styrian Golding and Fuggles as used the East Kent for my next Fullers 1845 brew.
- Also swapped yeast for S-04 for same reason
- Added fruit to a make a change. Thinking Badger Cranberry Poacher which uses damsons.
- The 90g Fuggles as bittering is high but with fruit might balance.
- Got A LOT BETTER after 4 months.
