Notes: 1st sparge of 6l yielded 26ltrs of wort. Took 2l out and reheated to strike of 72 and mashed 4kgs of Maris and another 125g of acidulated malt with 25l. Over struck temp and backed down with 1l cold water after removing the same in wort. |

Notes: -Mash 67C fo 70 mins
-Mash out 77C for 10 mins
-Sparge to 30L and boil down to 25L with FWH added during sparge
-With 10 mins left in boil, hook up chiller to sanitise
-Add nutrient and 1/2 protofloc with 5 mins left
-Chill to 80C and add first whirlpool addition, allow to cool to 70C
-Add second whirlpool addition @73C for 10 mins holding temp
-Final whirlpool @67C for 30 mins holding temp
-Allow to stand for 30 mins after whirlpool is turned off
-Ferment with blow off tube for 3 days then spund @5PSI for 3 more days
-Chill down to 14C and add dry hops. Set spunding valve to 12PSI but allow fermenter to build pressure. Rouse them 2 times a day for 2 days
-Cold crash and transfer to keg under pressure
-Carbonate slowly over 5 days |

Notes: Overall Impression: A pale-colored, mildly bitter, highly attenuated, and well-carbonated Trappist-style ale, showing a fruity-spicy Trappist yeast character, a spicy-floral hop profile, and a soft, supportive grainy-sweet malt palate.
Aroma: Medium-high Trappist yeast character, showing a fruity-spicy character along with medium spicy and floral hops, enhanced by sweet orange and coriander spice additions. Medium-low grainy-sweet malt backdrop, with light honey quality. Medium-light spicy, yeast-driven phenolics.
Appearance: Light gold color. Slight haze, with a moderate-sized, persistent, billowy-white head with characteristic lacing.
Flavor: Fruity, hoppy, bitter, and dry. Initial malty-sweet
impression, with a grainy-sweet soft malt palate, and a dry,
hoppy finish. The malt light honeyed biscuit impression. Moderate spicy and floral hop flavor. Orange, apricot, yellow apple esters. Moderate pepper, and clove phenolics. Bitterness rises towards the crisp, dry finish, with an aftertaste of light malt, moderate hops, and a yeasty character.
Mouthfeel: Medium-light body. Smooth. Soft, yet Medium-high carbonation is somewhat prickly. No noticeable alcohol warmth. |
