Man, this one came out great!! If anything; would increase the IBU by a little maybe 15%? Or, more gypsum in the RO water? Smooth, crisp, aromatic nothing out of whack no note too strong. Nice head. Will repeat!! |

Notes: Single infusion mash @ 152F for 60 minutes. Keep between 150-152F.
Cool quickly, oxygenate and pitch.
Ferment at 64F and for 24-hours then allow to free rise no higher than 78F. Dry hop with 1 oz Mandarina Bavaria at last 3 days of primary.
Let sit in primary for a few days at 78F.
Add pure orange extract (McCormick), to taste at kegging.
Add 2 split vanilla beans at kegging. |

16/9/24 - Cold crashed to 10 C with CO2 rig
17/9/24 - Added dry hops, Tilt appears to have lost it's calibration, reading FG: 1025 which seems really high.
22/9/24 - Kegged and carbed.
Batch #2 - Leo's Little Leo Red Willy (Previously known as "Voices In My Red")
(55% Eff., 6.4% ABV) - 31/3/19
- No Riwaka (sub. Nelson Sauv.) or Pacific Jade (sub. Hallertau MF) hops in this batch.
9/4/19 - SG:1017, tasting a little green, dry hopped.
12/4/19 - Cold crashed to 1.5C.
19/5/19 - This was a very popular beer with just about everyone, definitely will make this (or a variation using same grist) again.
Batch #1 - 3/2/19 (61% Eff.)
- Boil time cut to 45min
- IPA/DIPA water profile used, slightly dialled back on sulphate
- Used pink Himalayan salt, because well...we had some.
Substitutions:
- Vienna substituted for Malt Europe - Mild Ale malt
- Toffee malt and Naked Malted Oats substituted for Golden Naked Oats
10/2/19 - SG:1024
14/2/19 - SG: 1022 came in a little higher than expected, cold crashed.
17/2/19 - Kegged and carbed, 18L in the keg.

Carolina Yeast BL09 - Saison Blend - Prepared 1.5L starter evening prior to brew day
To prepare the coffee: Brew 8 oz (227 g) of medium-ground coffee (preferably an Ethiopian sun-dried or your favorite fruit-forward, light-roasted coffee) using about 45 fl oz (1.3 l) of cold water. Allow to brew for 8−16 hours. Filter out the grounds.
Fermentation:
Chill the wort to 62-64F (16.67-17.7C)
Oxygenate/Aerate the wort with about a 30 second blast of oxygen through a stone.
Place the wort in a temperature controlled environment at 65F (18.3C) for 3 days before letting ramp (or if you're like me and don't have enough space for temp controlling everything - I'll place the fermenter in an iced water bath and let the heat of the day and the ferment melt the ice and raise the temperature to mid 80's and 90's (29-35C). It's perfectly safe to drive a Saison yeast this hard if you've started cooler. |
