Optimize 4MMP + 3MH/3SH thiol precursor release by using microbes that produce β-lyase in beer:
- VIN 7 and VIN 13 (wine yeast)
- Derivatives of London Ale III (wyeast) and British Ale V (omega), such as OYL-402 Cosmic Punch
- Torulaspora delbrueckii
- Lactobacillus plantarum
- certain Brett strains have high betaglucosidase enzyme
Oxygenate wort to promote conversion, but reduce oxygen during and post-fermentation
No nitrogen-based nutrient additions (N reduces conversions)
Dry hop (20degC) prior to fermentation. Dry hop during lagering at 30 days (optional).
Aged high-AA hops like Apollo or Bravo for hop-derived fatty acids (convert to esters)
Add high-free-geraniol hops in WP & DH: Centennial hops, Coriander spice

Notes: Pale yellow, smooth, malt forward, light and crisp body, can taste just a bit of sweetness from the corn. A bit of diacetyl initially, which I find is common with this yeast, even with several days of diacetyl rest. It will dissipate completely with time. This beer is best after minimum 4+ weeks lagering. I think its better kegged with that fizzy carbonic bite.
Clean taste, no fruity aftertastes. Peppery? hop aroma at the end of swallow, dry and drinkable. Goes good on a hot day in the water and sunburn.
Still didnt make me the most interesting man in the world.... |

Notes: Just an attempt to make a typical light ale without adding corn or rice or other junk.
Adjusted for efficiency and final ABV. Very pale in color and could probably do without the last 2min addition of saaz hops if your looking for a Coors lite type of beer with no hop flavor.
Planning to repeat with Hallertau with no last minute additions. |
