08/24/2025: Very sweet, bisuity, malty, deep malty almost caramel comes out as it warms. When cold is
08/09/2025: Early yet... but much sweeter than other versions (golden promise pale), light cracker or biscuit, but doesn't feel warm. Would go back to a Maris Otter, maybe with a touch of pale to bring out the sweet. Increase caramel malts a touch to contribute to warmth and sweet.7/23/2025: Pushing the water big time... pushed up all ions, and went fucking crazy with RA and Alkalinity - both are way higher with this on as I worked to Palmer's numbers. Focusing on those numbers in the water profile, not in the mash.

Fermentation Notes

3/6/2025: Fermentation stopped at about 1.020 - was again looking for 1.015. I could coax gravity down to 1.018 by raising the temperature to 72*f, and stirring the yeast cake well. Saw pops into 1.017 overnight, but likely will not stick. Lowering the temperature back to 65*f today and letting the beer sit and clear.
12/21/2024: Fermentation stuck at 1.021 (looking for 1.014). I added yeast nutrients as well. Not the first time this has happened with this yeast.... It could be old yeast, the water chemistry, or the pH was too low (we can measure that). It could just be we can't use this yeast! |

Notes: This is a high gravity doppelbock, with very low hopping rate appropriate for style. Made only with German Munich, German Pilsner, CaraMunich III 60L and Special B [for dark fruit flavors]). Melanoidin malt added to account for not doing decoction.
Need huge starter for this. Using yeast cake in Torpedo keg used to ferment Märzen/Oktoberfest with Saflager S-23.
Mash: 20 min at 128F (protein rest), 60 min at 150F (beta rest), 30 min at 158 (alpha rest), 10 min at 168F (mash out).
Boil: 60 min, with Hallertau Mittelfruh added at 30 and Hallertau Hersbrucker added at 60 minutes.
This beer is named Dialator (misspelled on purpose, but to emphasize the theme) since heavy alcohol is known to dilate the pupils, etc. |

Notes: Bashing a Brewers Best Scottish Ale kit. The grains are very old, so I thought I would augment them a bit with some new additions - 4 oz of Goldswaen Red Malt and 4 oz of Briess Chocolate. Then the Diastatic was low, so I added a pound of Maris Otter malt. I double crushed my grains. I tripled the mash time. Blacker than Midnight, Blacker than Pitch, Blacker than the foulest Witch...
I plan on getting some chocolate wheat malt. Many online sources claim more chocolate notes from chocolate wheat and none of the roasty additions that barley or rye bring. Maybe next time.
I'm gonna start the mash and let it go until I can boil later today. It'll shut off automagically after an hour.
The boil is simple. Crank it up to a boil, add the LME, boil 40 minutes. Add the DME - boil 5. Knockout. Chill, Transfer. |
