Notes: 1) Boiled 7 gals of tap water with half campden and added salts after boil
2) Forgot to add rice husks to the bottom but mashed in at 170 and recirculated after adding husks - mash ph read 5.2 without lactic acid
3) Closed lid and set timer for 70 mins
4) After mash time, vorlauf and wort was clear after about 1/2 gallon
5) 2 gal Sparge water start ph 9, added 1.5 tsp of lactic acid overshot low. Cut with tap water and baking soda to 5.4ph and began sparge
6) Didn't have enough sparge water so separately boiled and added another gallon to get to 6.5 gals pre-boil - mash ph 5.2 | Pre-boil OG 1.068
7) Boiled, followed hop schedule, then cooled to whirlpool temp. Didn't whirlpool but hop stand and recirculated through hop spider.
8) Cooled, transfered to fermenter, and put in ferm chamber at 66, aerated with reg air filter pump for 30 mins and pitched yeast starter
9) Aggressive fermentation, then slowed, checked gravity at 8 days - FG 1.019 on target
10) Cooled to 60F, added dry hops, flushed headspace with CO2, and let sit for 5 days
11) After 5 days, dropped to 38 to crash for 48 hours and closed transfer to sanitized and purged keg

Notes: Lotus
otus™ is the latest experimental hop variety developed under the Hopsteiner breeding program to now be available to homebrewers. This tenacious hop outperformed thousands of brothers and sisters born of the initial cross breeding and survived a decade long journey to become the hottest addition to Hopsteiner's unique portfolio of exciting new hop varieties. Lotus™ displays exceptional aromatic characteristics, boasting waves of orange and vanilla followed by notes of candied grape and tropical fruit aromas.
Lotus’s genetic origin stems from Eastern Gold, a Japanese hop variety dating back to the 1930s, followed by a mix of Apollo, Cascade, and a USDA male. The USDA male was bred from an open pollinated seedling of a wild American hop developed at Wye College, England. The cross from the USDA male with Neomexicanus heritage adds an additional layer of complexity and uniqueness to this variety.

Sabro
For many years Sabro™ brand HBC 438 has been unofficially referred to as Ron Mexico due to its native US neomexicanus hop heritage, and was once one of the more difficult hops to get your hands on. It developed such a huge cult following in the brewing community that you can trace the recent boom in available neomexicanus hop varieties back to HBC 438. Sabro is notable for its complexity of fruity and citrus flavors. It imparts distinct tangerine, coconut, tropical fruit, and stone fruit aromas, with hints of cedar, mint, and cream. Sabro’s pedigree is the result of a unique cross pollination of a female neomexicanus hop. With a robust brewing performance, Sabro proves to be a strongly expressive hop that translates its flavor incredibly well into beer.
Vinnie of Russian River Brewing once used this hop in an experimental beer brewed for the National Homebrewers Conference, which was an absolute hit. We recently toured Russian River's new Windsor brewery with Vinnie, and he still raves about this hop and will happily talk about the origin of the Ron Mexico alias with a Cheshire grin on his face. We think you'll absolutely love this hop for brewing juicy, tropical pale ales and IPAs!

Notes: Be sure to add the maple syrup right around high krausen to maximize how much maple character is retained. I originally planned on priming it with Maple Syrup too, but it had enough of that flavor going on at bottling. Just an idea if you aren't happy with the taste
Toasted Oats (0.25 lb fermentable in grain bill):
Yeah I just toast them in my oven. Works great for other alts too. I try to have 1lb or so of wheat rye oats and 2row toasted at any given time.
I usually toast 1.5lb at a time because that's how much fits evenly in my pan
Turn the oven to 350f and have an even layer of oats (can't see bottom of pan) and toast maybe 30-45min. It depends on how much you put in. I try to flip and move them around every 20 min or so. Eventually they should smell like an oatmeal cookie and barely be different by inspection.
I store mine in a paper bag that's clipped shut. I've read that helps absorb some if the harsher aromatics. But I've also read (and found from experience) unless you almost burn them, they are good to go as soon as they cool |

C5 hop is a combo of cascade centennial citra columbus and chinook. i had more on hand of cascade and centennial so i did 1.2 centennial and 1.3 cascade , 1oz everything else for a total of 6 oz used. calculated the weighted average of the AA, hopefully that checks out.
using reused london ale yeast from a previous batch amber lamps. the yeast was never taken out of the fermentor. (taking half of the yeast to use on a barleywine im also brewing tonight) |
