Notes: Mash the grains at 118°F (47°C) for 20 minutes. Ramp up to 135°F (57°C) and hold for 5 minutes. To reach the saccharification temperature of 156°F (69°C), there are two methods, depending on your equipment. If your heat source can raise the temperature of the mash rapidly (in 5 to 10 minutes), then do so. If not, add 200°F (93°C) water to the mash, stirring vigorously to avoid hot spots, until you reach the target temperature. (American 2-row pale malt is diastatically powerful, and if the mash isn’t heated quickly enough, the resulting wort will be too fermentable.) Hold for 35 minutes at 156°F (69°C), then ramp up to mash out at 170°F (77°C). Vorlauf and then sparge at 170°F (77°C) until you’ve collected enough wort (gravity should be 13°P/1.053 SG). Boil for 75 minutes, adding the hops as instructed. (Brooklyn Brewery’s boil is 15 minutes longer, but boiling longer over a direct flame would result in too much color development). If necessary, adjust the volume to 5 gallons (19 L). Cool to 55°F (13°C) and pitch the yeast. Once activity has clearly started (approximately 24 hours for lagers), ferment at 52°F (11°C). As activity subsides toward the end of fermentation, allow a free rise to 60°F (16°C) over 48 hours. Once the fermentation is finished, bring the temperature to 36°F (2.2°C) for lagering. After 1 week at 36°F (2.2°C), add the dry hops and hold for 10 days. Bottle or keg as usual. |

There is no need to use finings such as unflavoured gelatin as the yeast is extremely flocculant and will drop brilliantly clear on its own. |

Left in 13C basement overnight to cool.
OG = 1.072
13L to FV. This volume was split into ~9L into a 14L FV bucket and ~4L (including approx 1.5L kettle trub) to a 5L plastic jug.
To rectify overshooting the OG, 2L of bottled spring water was added to the 14L FV to liquor back to 1.060 (500ml added to the 5L jug to reach approx the same).
New OG = 1.060
Fermentation:
Dry US05 pitched 18/04/20. Probs over pitched but old east straight from fridge + not a lot of O2 in wort from no-chill method.
Signs of fermentation in 13-14C basement.
FG : 1.012 at bottling
Bottled on 30/4/20
Notes from bottling day:
Big grapefruit citrus aroma with hint of passionfruit.
Very light, hazy appearance. Some hop matter made it to bottling bucket (no cold crash).
52g og table sugar in ~10L @18C for a pre-brett carb of 2.2 volumes.
Tasting 4/4/20 (very early, 3days in bottle).
Medium carb. Mango/passionfruit/pine aroma. Good IPA fruity flavour up front. Thin body. Too bitter and harsh. Galaxy as a bittering hops not ideal. No chill needs to be scaled back another 15IBU at least.
IMPORTANT!!!
I messed up the Brett contribution to carbonation on this.
Per 0.001sg = 1/2 volume or 1P = 2 volumes assuming Brett ferments to dry.
Dumped these beers after 3 weeks in the bottle and they were starting to show signs of over carb. |

Notes: Note: Use coopers 1.7kg Australian Pale ale (not LME)
In a large pot, add 3 litres water and 500g Light dry malt extract and bring to boil.
Add 15g amarillo and boil for 15 minutes.
Add 15g amarillo and boil for 10 minutes.
Turn off heat and add 15g Galaxy. Let steep for 5 minutes and then move pot to ice bath and let cool for about 10 minutes.
Strain into fermenter and add the coopers tin and 1kg dextrose.
Add enough cold water to bring to 22 litres. Ensure water is cold enough that final temp of wort is between 20-24 degrees celcius. Once temp is in this range, add the yeast and then set to ferment at 20 degrees celcius.
Once fermentation has completed (approx 1.08), add 20g galaxy to fermenter and leave for another 3 days before bottling or kegging.
