Mash at 152° Fahrenheit for 30 minutes. Starch conversion is not as important here, as the wild bugs will chew up the complex starches in secondary.
Mash out at 170°, then bring to a boil. As it starts boiling, add your cheesy, nasty old hops to the kettle.
Boil them for 90 minutes, then chill the beer and rack it to primary.
Pitch the dry yeast and seal it up for 14 days.
Once 14 days have passed, you can then pitch the lambic directly into primary and perform the secondary in the same vessel, or you can rack to a clean fermenter for secondary if you are more comfortable with it.
Let sit for 6 months, then take a gravity reading.
You can bottle at this point with some corn sugar or you can continue to let it age for as long as you like.
Variation:
After primary fermentation is complete, rack the beer onto at least 5 pounds of fruit in secondary. Make sure the fruit has not been treated with a bunch of chemicals at the grocery store. Buy from a local orchard if possible, or, if you can, get some IQF (Instant Quick Frozen) fruit. IT is commonly sold commercially, but is hard to get for home use.
You can do as much as ten pounds of some fruits if you like. Stone fruits like cherries and peaches are excellent options, but peel the peaches if you use them. Let it ferment for the full 6 months, and then taste it and take a gravity reading. If you’re happy, bottle it. If you want to give it more time, let it ride. |

Notes: Heat 6.5 gallons to 152 F.
Slowly pour in grains stirring constantly as you pour.
Wait 60 mins. You can slowly recirculate wort through grain during this time.
At 15-20 mins left, heat 1-1.5 gallons of water to 170F.
Raise grain out to drain.
Once draining slows, pour 170F water over grains and let
drain. What you want to do is pour until you have about 6 gallons
in your Brewers Edge. (may need a flash light)
Bring this volume up to a boil. Once it come to a boil, Add the oz of Mt Hood to boil and start a 60 min timer.
When your timer gets to 15 min. Add another 1oz of Mt Hood and put your wort chiller into boil (this will sterilize it!) and hook up your hose.
At mins, turn off burners and turn on hose to chill. You can also circulate at this point also to chill faster.
Once wort gets to 70-75F, drain into sanitized bucket (make sure spigot is off) to ferment.
Sprinkle yeast on top, wait 15 mins and with a sanitized spoon, stir in. Put lid on, making sure it snaps down completely! Add airlock and fill up to lines with sanitizer. Ferment at room temp. for 3 days and add the 2oz of Mosaic. Wait 5 days and siphon into carboy. Wait till clear and bottle. |

Notes: Drop a 1L 1.040 starter on yeast cake from small beer 24hrs before fermentation
Mill the grains and follow these steps for a decoction mash: Mash pH 5.3
Mash in at 144°F (62°C) and hold 20 minutes; raise the temperature to 149°F (65°C) and hold 20 minutes; raise the temperature to 162°F (72°C) and hold 20 minutes; remove one-third of the mash and boil it for 15 minutes (or remove two-thirds and boil the remaining one-third, depending on what works best for your system); return the boiled portion to the main mash, which should bring the temperature to about 171°F (77°C).
Vorlauf until runnings are clear, then run off into kettle. Sparge the grains and top up as necessary to obtain 6.8 gallons (25.7 liters) of wort—or more, depending on your evaporation rate. Boil for 90 minutes, following the hops schedule. After the boil, chill the wort to 46°F (8°C), aerate, and pitch the yeast. Ferment at 50°F (10°C). When the gravity has dropped to about 1.018 (4.5°P), increase the temperature to 54°F (12°C). When beer has fermented completely, decrease the temperature by about 4°F (2°C) per day until you reach 39°F (4°C). Hold there for 4 days, then decrease the temperature to 32°F (0°C) and lager for at least 3 weeks—preferably longer.

Mash at 148 F for 75 minutes. Recirculate 2 qts of wort via hand method every 10-15 minutes. Sparge. Bring boil up to 6 gallons and proceed per instructions. Chill via immersion chiller. Pitch yeast at 68 F.
