Notes: First go at this is very rough: Using a 1.8 lb can of Mr Beer Cerveza HME as the extract. Actual IBUs will be slightly higher, no way to account for extract being hopped, but should be just enough to tip scales over into lower American IPA range.
Cane Sugar represents 4L of Mountain Dew (which has 518g of sugar), mostly decarbonated. Inspired by forum.northernbrewer.com/viewtopic.php?t=50805, hopping adjusted to fit 1) my available hops on hand and 2) still producing an IPA appropriate IBU despite my smaller boil size and different hops used.
Base recipe was all grain, added 8 oz of 60L American Munich to get SRM without using an absurd amount of steeping grains.
Goal was to find a good use for these spare ingredients on hand and still stay close to the |

Notes: Taken from page 315 of ASB's
I've changed the Brett C to Brett B for a more aggressive Brett character
I may possibly dry hop with some more noble hops (Hallertau or Sterling) towards packaging as Mike suggests
As per Experimental Homebrewing I will leave the lid very lose during fermentation so not to cause any pressure on the Dupont yeast which apparently can stall even with the slightest amount of back pressure

This beer is madde to accent the green tea flavour, inoffensive hops etc. Bitterness will come from the tea rather than hops. |

Notes: Translated from Cloned/Copied Recipe.
The amount of mash and rinse water you should use depends on the equipment and the method you brew. As an estimate, we can say that you can use 20 l of mash water and 13.3 l of rinsing water for this beer. Some brewing machines (eg Speidel Braumeister) may require larger amounts of mash water. Always check the manual on the equipment you use.
Mashing at 65 degrees for 75 min. Mash at 77 degrees for 5 minutes if you have the opportunity to increase the temperature in the mash.
Cool to 15 degrees before pitching yeast.
Fermentation at 16 degrees until storm fermentation begins to decrease (typically after 3-5 days). Then increase to 20 degrees and keep the rest of the fermentation period (a total of 14 days). |
