Notes: For my traditional sour ale I am choosing to brew a gose. I'm choosing a gose because when it comes to traditional, this is a very traditional german sour ale. I'm also picking this style because I rather enjoy it as well.
Starting with my malt choices: When brewing a traditional gose you want to have half of your matl split between Pilsner and Wheat malt. So i've chosen those two malts at 4lb's each making up 95.2% of the grain bill. I have also added 0.4lb's of Acidulated malt. I added Acidulated malt to help lower the pH since we are going to want it to be lower than a normal ale.
My Hop additions I chose because I wanted to use a German Bittering Hop. I'm using very little because I wanted to keep the IBU's low and in range for the Gose style.
I chose my yeast as German Ale Yeast because I want this to ferment out nice and clean. I plan to ferment it out in about 5-7 days, then allow to condition so I can add some kind of fruit in secondary. If i'm choosing now, I would like to do blackberries.
Some special steps in this brew that i'm doing is that i'm going to mash and lauter how I normally would, but would only boil the wort for 10 minutes and then I would transfer to an empty fermenter and add Wild Brew Sour pitch which is classiffied as Lactobacillus plantarum, a facultative hetero-fermentative strain.. This will drop the pH in the time that I want it to, it will also give my wort a citrus and tangy taste and produce the lactic acid I need to lower the pH to acceptable levels. This should get my pH to a level between 3.2-3.5.
If I brew this beer on March 20, 2020. I would expect it to be ready to drink by the second week of April. |

This made a great beer! I made it for a party and everyone seemed to really enjoy it! It was quite low ABV and not a strong sour, so it made for a good day-in-the-sun beer. |

After a very good brew day I had a lot of trouble getting temp from 16°C to the 17/18 range I was hoping. Dropped to 15°C overnight and took 2.5 days to begin fermentation.
Then I overshot temp up to 21/22°C following that.
Tasted on 29-5-18 and tasted good with no off flavours or infection.
1.020 31-5-18 - Temp around 21°C, tasting good with light alcohol on nose. Moderate fruity esters, hints of banana and dark fruits. Plenty of malt character and yeast character.
1.008 3-6-18 Temp around 22°C, tasting good still. Good balance between malt, esters and bitterness.

9/8/18 Drinking quite well. Not as happy as I would like but still a very good beer. Too dark for the style. Next time I’ll use only 60L Belgian Candi syrup. Less syrup overall. I will also improve yeast pitch rate and temp control.

Notes: Steep milled malt along with amylase enzyme and 2 TSP gypsum in 2 - 4 gallons of water at 163.4 F for 30 - 45 minutes. Sparge malt with 170 F water until water runs clear. Top kettle up to 6.5 gallon pre-boil size. Bring to boil.
Pitch LME or syrup, allow to achieve hot break, and maintain rolling boil.
1 OZ Northern Brewer Hops @ 60 min
0.5 OZ Fuggle Hops @ 20 min
0.5 OZ Tettnager Hops @ 10 min
1 TSP Irish Moss @ 10 min
Cool wort to 170 F before adding cherries. Do not add cherries to temperature above 170 F or the natural fruit pectin will set. Stir wort for 2 minutes.
4 TSP Pectic Enzyme before pitching yeast
SafAle S-04 English Ale Yeast (recommended)
Rack to secondary after 7 days leaving behind any fruit and trub.

Notes: Cool down to 100° and transfer to completely sanitized better bottle (that's what I use). If you have a pH meter, drop the pH to 4.2 with 88% lactic acid, if you do not then add roughly a tablespoon.
Add 2 super shots of goodbelly (each are 50 billion units), some people use a half to full carton of the goodbelly drink...I prefer the shots.
Seal up and leave at room temp for 36-48 hours. If it doesn't fall to yeast pitching temp on it's own, chill it using your preferred method (I have added a sanitized bag of ice, also have put in a fridge when I had room).
Pitch yeast and let ferment out. Dry hop after 7 days and dry hop for 7 days. |
