Notes: Fruit addition details:
- Add Rhubarb at Flame Out.
- Chill wort to 170*F
- Add Raspberry puree
- Hold at 170*F for 20 minutes
- Continue with immersion chill to 70*F
Won silver in the fruit beer category for a ladies homebrew competition! BJCP Judges notes:
Judge1: I'd enjoy slightly more body and dryness; I'd suggest adding flaked barley to acheive both ends.
Judge 2: I would have liked a tad more body and perceived alcohol - can you increase your grain bill somewhat? |

Notes: This is a very simple cider with few additives to let the apple flavor shine through. With proper aging, it produces a dry, fruity cider.
- Add 1g/L Malic acid to lower pH by .1 as needed to reach 3.7 pH.
- Check pH and add potassium metabisulfite as needed for a partial kill (for more information see chart: www.cider.org.uk/sulphite.html).
- Stock solution SO2: dissolve 3 grams of potassium metabisulphite in 30 ml (also grams) of water which corresponds to 50 ppm of SO2 for a six gallon batch
- Wait 24 to 48 hours before adding pectic enzyme and pitching rehydrated yeast.
- Primary fermentation: 4-6 weeks @ 55°
- Add 5 crushed campden tablets dissolved in a bit of cider to carboy /keg before transferring for secondary/conditioning.
- Secondary: 8 weeks or until clear @ 60°- 65° (cellar temps)
- Keg condition: 6 months @ 60°- 65° (cellar temps) in pressurized keg

DANISH RED LAGER
ABV 5.5% • IBU 23
STYLE
VIENNA LAGER
INSPIRATION
The Danish Red Lager is inspired by the red lagers of Denmark and the signature red color of the Danish flag. This quality brew is crafted with a blend of European lager and sweet caramel malts, creating a beautiful ruby hue.
TASTING NOTES
Danish Red Lager is crafted with seven kinds of specialty malts to produce layers of rich, caramel malt flavor and a full body. This beer is fermented with a European lager yeast and cold-conditioned for an extended period of time for a very clean profile.

| Notes: This is my take on Westvleteren Blond. It uses their yeast, grist and temperature schedule(for fermentation), but different hops. If you've read multiple of my recipes you may have realized that I am in love with Ultra hops. They are a Saaz and Hallertau hybrid. My two favorite hops to begin with. A blend of those would work fine if you can't find them at the LHBS or you could used your own favorite and make it your own beer! To increase grassyness in accordance with the original beer I use them for bittering as well as aroma and add the sugar to the start of my boil to lower hop utilization so that more hops can be used while contributing less bitterness. First wort hop and boil for 90 minutes or more. Moon Hooch is a great band and the beer is named after them. |

Notes: This session-strength Saison of summer pours tawnygold and perfumes the air with tangy yeast and pungent hop aromas. The flavor is lightly earthy with spicy, flowery hops and a grain-and-bread malt character; caramel malt dukes it out with Saaz and Styrian Goldings (Celeia) through the middle before a palate-cleansingly dry finish. The blend of malt and hops combine to bring out the best in the real star of this sprightly Belgian ale: Wyeast’s immensely popular Saison strain.
