Notes: Trying to turn out a very quick cider:
- Rehydrate one packet of Lallemand Voss in GoFerm PE as per instructions
- Pitch into ~4.6 gal of Kirkland brand apple juice @90f. Add 10-11 drops Fermcap S to reduce krausen and hopefully prevent the mess that's pretty much guaranteed to happen given the inadequate headspace I'm providing - even given I'm starting with a blowoff tube. Ramp temperature up to 96f over the next few hours.
- Just after lag phase has ended mix 7.5g Fermaid O into some apple juice until thoroughly dissolved, and add with enough juice to top up to 4.7 gal total.
- Just before the 1.3 sugar break (1.040-1.034) mix 7.5g Fermaid O into some apple juice until thoroughly dissolved, and add with enough juice to top up to 4.8 gal total.
- After ~24 hours at FG, start cold crashing.
- Rack to serving keg after 24-48 hours at cold crash temperatures, and start force carbing.
- Taste and stabilize and backsweeten or add flavoring if necessary. I have a variety of tinctures I might add to make this more interesting, depending on how things turn out.
- Drink Young, hopefully within a week or so.
Nutrient schedule is roughly cribbed from https://www.meadmakr.com/batch-buildr/, using the Fermaid O only TONSA 2.0 schedule, with high nitrogen requirements and taking into account that the Voss Kviek is (hopefully) going to blitz through the must. |

A beautiful IPA that is well balanced with Crystal and Cascade hops, and spiced up with adding coffee!

## Notes##
Dry hop in secondary by adding pellets directly to carboy. I let it sit for 3 days, but could stand for up to 5. Any longer and you'll get a grassy flavor.
Coffee used is Lucky Jack Cold Brew CONCENTRATE. It was not diluted. This is a key point to add. We came up with the ratio by measuring out 1 cup of IPA and adding 1/2 tsp a time until we got a flavor profile we liked and then scaled up.

Notes: Sparged into 3 gallon pot and added back to 10 gallon pot prior to boiling. transferring added a lot of oxygen to the boil and resulted in wort being prone to boil over from the start.
Wyeast package partially swollen before rupturing inner yeast packet.
The conical fermenter main valve clogged immediately due to large amount of hops used in recipe...unclogged with sterilized racking cane.
Brew day 11/25/17 finish 4pm. Started bubbling by 8pm...vigorous fermentation through 11/27/17. |

Notes: this beer turned out phenomenal. one of the best beers i have ever brewed.
Azacca is a beautiful hop. I added half a kilo of dextrin malt because i had a few kilo's of it in the freezer that i am trying to get through after ordering 5 kg rahter than 1kg. dextrin (carapils) malt actually tastes pretty good however and works really well with the maris otter.
next time i do this beer i would probably halve the dextrin malt and add some wheat malt so approx 5% wheat and 5% dextrin. I'd also use a higher sulphate water chem, aim for something in the range of light and hoppy as a starting point, and possibly even go higher on the suphate to accentuate the azacca more.
azacca as a single hop was beautiful, had a huge range of flavours and to be honest i probably wouldnt find to many other types of hops that i would use with azacca as i feel its already got a lot going on. (except maybe somethign as a 60 min bittering addition so i can save more azacca for whirlpool/dry hopping) |

Notes: Heat 4 gallons of water to strike temp and add grains. mash at 150 F for 90 minute's. in a separate kettle heat 2.50 gallon's of water to 168 F. remove grain bag from kettle and place in kettle with 2.50 gallon's @ 168 F. dunk sparge for 10 minutes. remove bag and squeeze it into the wort. combine both wort's into boil kettle and adjust volume if needed. |
