Maple Coffee Stout's base is an oatmeal stout. Maple syrup is added at flameout as an additional fermentable. After fermentation is complete and before cold crashing, whole coffee beans will be added to the fermenter. The beans will then basically cold brew on the beer as it crashes. And lastly, since all maple flavor will likely ferment out, maple flavor will be added to the keg before kegging.
This batch was brewed for the SMASH Homebrew Club of Southern MD and will be served on tap at Scorpion Brewing in Owings, MD.
__________
- Reserve 1/2 gallon of distilled water and cold steep chocolate malt in it for duration of the mash. Dump liquid and grains into the basket right at the end of the mash.
- Add maple syrup to the kettle at flameout.
- Add whole coffee beans to fermenter just before cold crashing. You'll essentially be cold brewing the coffee in the beer.
- Add maple flavoring to the keg just before kegging. |

Notes: Made some tweaks recently to my batch #1.
Compared to 2016 Heady Topper mine was coming out slightly too dark by 1 or 2 SRM and was also slightly too candy-ish, which I attribute to both the Caramalt and the Amarillo hops %s. I reduced both in this batch. Actually subbed Comet for Amarillo. I also swapped Turbinado (Sugar in the Raw) with plain old corn sugar (Dextrose) to eliminate even more darkness/residual sweetness. Finally I upped the Columbus and lowered the Simcoe.
For the Malt Bill use the following brands:
Thomas Fawcett Pearl Malt
Thomas Fawcett CaraMalt
Canada Malting White Wheat Malt
Primary fermentation target 68*ambient. Allow to rise to the low 70s as primary fermentation nears completion.
"Conan" yeast is essential for this recipe to turn out correctly. I use the Yeast Bay's "Vermont Ale." There are a few other brands that are based on the Conan strain. Harvesting Conan from cans of Heady Topper would be best. If you can't get Conan, you could try English strains Wyeast 1968, White Labs 007, or Safale US-04, but they may not attenuate low enough and could result in too much sweetness.
For the bittering hop addition use 10 ml of HopShot at 90 minutes (boil). This should add 117 IBUs.
Allow wort to cool to around 180 degrees and add whirlpool hop addition.
Split the Dry Hop into 2 additions over 8 days (4 days each.
Note: Shooting for 130 IBUs total, mostly from the hopshot. The very late additions should not have noticeable utilization (maybe 10%).

Notes: First... I don't understand why the formula gives these specific gravities... my OG lands at 1.067/68 and FG at 1.008/06.
The Rolled Oats consist of toasted Quaker Oatmeal(laid out in toaster oven until heavily toasted).
Grains are put into bag in a 5 gallon water cooler, covered with about 2.5 gallons of water at 149 degrees. After 30 minutes check water... add and stir enough 185 degree water to bring temp up to 148 for about 30 to 40 minutes. Total mash time of appx 1 hour. Sparge with 185-190 degree water to make about 3.5 gallon wort.
For me this wort has a SG of 1.022 at 60 degrees.
Add DME. After hot break start adding hops.
Boil 1 hour...Add brown sugar and honey during last 15 minutes of boil.
To cool, I set my 30 quart aluminum brewpot into an ice bath. I use a large plastic tote with 4, 10 lb bags of ice and water. With regular stirring of the wort, this usually cools it from around 190 down to 80 degrees within 40 minutes.
I keep 2 gallons of water in the freezer for about 20 minutes. I pour my chilled wort into the fermenter and then add the 2 gallons to make about 5.5 gallons.
Re-hydrate 2 packs of Nottingham dry yeast, pitch and ferment at 65 to 70 degrees for 7 to 10 days.
Rack to secondary for 5-7 days.
Bottle and condition for at least 10-15 days.
Bottle condition with 4 oz. of cane sugar for a minimum of 10 to 15 days. A 60 day conditioning is recommended.
Enjoy!
Now... the reason I call this beer a "specialty beer" is because of the feel and after taste. I believe that because of the low mash temperature and "neutral" flavor of the Nottingham yeast, this beer has a hard time fitting into the stout category... it's just too dry, light and crisp tasting to be a stout or porter. I waited until my 2nd brewing and finishing before publishing this recipe. If anyone wants to give it a try and then offer any advice or criticism I'd love to hear it. |

Notes: Meris Otter LME. 11/12/13 I shared this at a local homebrew competition and was told by every judge and person that tried it, if I would have entered it into the competition I would have won hands down! I will be entering into the big beer competition in February. I'll post results then.
2/10/13
I entered my all grain version of this brew at the local home brew open category, peoples choice, 1st place finish! |
