Notes: Namquid Point is the location in Rhode Island where the Gaspee Affair took place. Considered one of the first acts of defiance against the Brits , the Burning of the Gaspee ship is celebrated in Rhode Island as a patriotic day of celebration.
This beer is inspired, by using a fiery yeast, Kviek Voss, and 3 different high acid hops, with the grain bill being about half and half american and british malts.
There are said to be a few Freemasons from St. Johns Lodge who participated and conspired in this revolutionary event. |

Put kettle dip tube just above parallel at 2 o'clock position.
Add DME and dextrose at 20 min just after chiller added.
At end of boil, power off. Let stand x 15 min, then add hop stand additions and let sit for 30 minutes allowing kettle temp to free fall. After 30 min hop stand, remove all hop bags and then chill to <68F
Once chilled, remove chiller and cover x 60 min for cold break to settle.
Add clarity firm at yeast pitch
Ferment at 67F
Near terminal gravity, chill to 65F and add hops (loose???) x 3 days, then cold crash x 2 additional days.
Add gelatin x 1 day, then rack to a sanitized and CO2 purged keg, add 5 mL Biofine Clear in gas port.
Total 6 days dry hop contact time
Chill x 7 days then pull off pint. |

Notes: 11/9/19: first batch using brew bag with cooler but bag not effective in this situation. Will have to invest in false bottom for next time.
Also, rye grains not crushed as well as they could have, so efficiency down to 60% from originally estimate 70% on account of this and process. Had to add 8 oz sugar with 1 qt of water after pitch.
Mashed in at 155.5 but forgot to check temp before lautering. Do not know how well cooler retained heat.
Boil off was higher than expected (.45 gallons/hour) at .565 gallons/hour.
Homegrown hops so don't know exact IBU.
60 seconds of O2 then pitched yeast (no starter) at 68. Left to ferment at upstairs room temp (upper 60s during day, cooler at night).
12/17: FG stable at 1.009, transferred about 2.85 gallons to secondary with brett. Will leave at upstairs at room temp. AAs on hops seem more like 6-8%, but no way to know for sure.
4/19: gravity at 1.003. Tastes good, bit of a pellicle that has yet to dissipate on its own.
11/16: Gravity right around, slightly below 1.000. Bottled to estimated 2.7 vol/co2. |
