Notes: Mashed at 63C for 90 mins. Simple cold sparge with 8 liters of cold water.
Had to top up with 5 gallons of cold water post boil in the end because my boiler is unreasonably efficient. Still came out at the .042 OG so all was good.
Seemed to brew out to FG within a couple of days, so I can only assume that MG's abbey yeast is powerful stuff.
Initial sample is pleasant and citrussy, and bitterness is bang-on. Smells a bit like an adult um-bongo. Beer is still dry hopping. Will update when final product is sampled.

This yeast is NOTORIOUS for sulfur notes.
Pitch the yeast at 52°F (11°C) and ferment at 54°F (12°C) for 5 days before raising the temperature slowly to clean up any diacetyl. Rack to secondary day 18 and allow at least 7–10 days of cold lagering time before packaging. |

This Blonde Ale is a new recipe and uses a new yeast - so it is a true Prototype. Originally lined up as part of the 2017 Prototype Challenge it was released shortly afterwards. but hey, these things happen. This yeast strain produces a marked sulphurous note in the beer. If that’s not your thing, don’t Burtonise your mash and see the difference!

Named in a slight deviation from our Hello My Name Is series, Konnichiwa Kitsune is a Japanese- inspired, yuzu-infused Imperial IPA, brewed with Amarillo, Cascade and Citra. These punchy new world hops bring orange, grapefruit and lime to back up the yuzu aroma and flavour. Big mandarin notes, balanced against a caramel malt biscuity base. Squeeze the fresh yuzu juice directly into the beer after primary fermentation is complete. Putting it in the hot wort may seem like better practice, but the juice will cook and some of the fresh citrus character will be lost.
