Notes: 1 lb (454 g) lactose at 10 minutes
Mash the grains at 164°F (73°C) for 45 minutes. Stabilize the temperature at 154°F (68°C). The pH should be 5.25. Vorlauf until your runnings are clear, then run off into the kettle. Don’t forget to add the first wort hops as you fill your kettle. Sparge the grains and top up as necessary to obtain 6 gallons (23 l) of wort—or more, depending on your evaporation rate. Boil for 75 minutes following the hops and additions schedule.
After the boil, chill the wort to slightly below fermentation temperature, about 66°F (19°C). Aerate the wort and pitch the yeast.

Give the yeast plenty of nutrients, either by producing a high gravity wort (OG >1.050), or by adding yeast nutrients for worts of lower gravity (OG <1.050).
Go easy on the bittering hops. Rapid kveik fermentations gives the beer a lower pH compared to other brewers yeasts, which can accentuate hop bitterness and make the beer astringent. For this reason it is often a good idea to shoot for a slightly higher terminal pH.
I also recommend using the same pitching temperatures as that of the original farmhouse brewers. This is the temperature denoted by ‘farmhouse pitch’ on the yeast packet.
Make a starter, and pitch about a teaspoon or more from the slurry. This will ensure your yeast is healthy, which makes for better fermentation performance.

Fermented at 17.5 for 3days then up to 18 for three then 19.
After fermentation, preheat oven to 180° C and toasted 375g coconut until golden brown (about 40 minutes). Turn the coconut to ensure even toasting. Then added to fermenter in a hop sock for 5 days at 5’C. Tastes amazing out of the fermentor!
Dry hopped in the keg with 100g of very toasted coconut
