Notes: 3 liter starter. Decant the day of brewing and make a 1 Liter starter just to wake the yeast up and dump it all into the fermenter.
Install Blowoff tube on fermenter...DO NOT SKIP THIS STEP OR YOU WILL BE CLEANING UP A MESS.
Ferment at 62 for the first 4-5 days and then let free rise to 70.
Let it sit on the yeast cake for about 2 weeks before racking to secondary.
Transfer to secondary and add whiskey soaked #3 char oak spirals.
Give it a taste after a couple of months and if it's good, cold crash for 5 days and proceed to bottling with a pinch of CBC yeast in each bottle. Do not try to add the yeast into the bottling bucket, it does not typically make it into the bottles when you do that. just use a pinch into each bottle. Let bottles age at room temperature for at least 4 weeks before checking carbonation. If they are carbonated, move them over to the fridge. Otherwise, check every week or so to see where the carb level is at. |

| Notes: Just another _ _ _ _ _ _ _ easy beer recipe. Ease of brewing is what makes good consistent beer. Also Experimentation and refining the processes as adapted to your environment. I brew in buckets in a house that stays pretty much 68-71F all summer. So Ales are easy here in the summer. Winter is a different story,having only wood heat,placement of the fer minter is crucial. Winter is a lager time for me,but they take too long so I put more fer- minters into service and still make Ales. P.S.I am brewing these ingredients today. August 31 2015 |

Changes since last brew:
* Slightly increased grain bill (was a little thin last time)
* Reduced mash and boil to 60 mins (90 mins seems unnecessary)
* Avoid starter, just smack pack night before (trying to avoid problems with yeast)
* Make sure to keep a little yeast in the keg (otherwise to clear)
* Reduce coriander dose and time
* Revert fresh orange peel to dried
Instructions:
* Mill all grain (including flaked grain)
* Chill the wort rapidly to 20 °C, let the break material settle, rack to the fermenter and aerate thoroughly.
* Begin fermentation at 18 °C slowly raising temperature to 22 °C by the last one-third of fermentation.
Notes:
* First reference suggests starting with a protein rest (15 min @ 50C), then slowly ramping up to 68C over 15 min to start the sacchrification rest, but second ref says you get just as good results from a single temp mash. So lets start with the simple version and try the more complicated one later.
* The total wort boil time is 90 minutes, which helps reduce the SMM present in the lightly-kilned Pilsner malt and results in less DMS in the beer. This also means we go for a higher kettle volume to compensate for extra evaporation loss.
