Color: 5.0 (6.0 - 15.0)
Alcohol: 6.6% (5.5% - 7.5%)
Bitterness: 55 (40.0 - 70.0)
Boil for 60 minutes. Lid on at flameout, start chilling immediately.
Cool wort to 66F and aerate well. Ferment at 66-68F until complete.
Add dry hops once fermentation is nearing completion (ie: below 1.015). Dry hop for 7-10 days total.
Rack to brite tank (secondary), crash chill to near freezing (if possible), add 1 tsp of unflavoured gelatin dissolved in a cup of hot distilled water per 5 gallons of beer, and let clear for 2-3 days.
Package as you would normally. I keg and carbonate on the low side (around 2 to 2.2 volumes of C02) to minimize carbonic bite and let the hop/malt flavour come through.

OG: 1.049, may be slightly higher as the test was quite warm.
Wort tastes very neutral. No sign of orange or coriander, but it's probably too sweet to notice.
10 days: 1.006(wtf?), Horrific burned rubber flavor/scent. Absolutely undrinkable. Racked to a secondary. |

Added too much sparge water, diluted wort. Probably could have gotten a couple more gravity points out of it.
Primary 9 days, racked onto 3 oz. of Glacier.
{proposed}cold crash 6 days into dry hop for ~ 5 days.
The beer was down to the 1.014 at the 9 day mark, tasted great(IMHO),but VERY cloudy. I'm hoping the cold crash, along with some bio-fine, will do the trick. Will edit when the beer is finished. If it sucks, I'll remove this. |

| Notes: This is going to be a split batch. The first 5G will be more of a grisette as it will be keg conditioned and served young, fermented clean with 3522. The other half will be a funky provision saison, fermented with a blend of my 3rd generation DuPont with LAB, 3726 and grown up Lodgsdon Seizoen dregs. That portion will ferment longer, get bottled, and age several months. |
