300 degF for 12.5 minutes is the perfect roast. Whole house should smell like brownies
Cold Brew ratio: 4oz water per 1oz grounds.
Brew at room temp if adding within 24 hrs
Brew at fridge temp if adding within 48 hrs
Do not brew for longer than 48 hrs to avoid peppery/astringent flavors. Ideal is 12 hrs room temp. If needed, strain off of grounds and leave in fridge until adding to whirlpool or finished beer.
5 packs of US05 (rehydrated) in 5 gallons finished around 1040. Finishing high due to different adjunct and lactose. This is good - leaves a lot of mouthfeel and thickness in a <10% ABV stout.
Once terminal gravity is reached, vanilla beans and cacao nibs are steeped for a week at room temp.
Chill beer to ~40 degF. Then cold steep coffee beans in finished beer for 24 hours.

Brewing in Anvil 5.5 gal kettle.
-Hops & spices added to a hops bag to lessen the trub.
-Add 4 oz maltodextrin during last 10 minutes of boil with remaining hops & spices.
-Add Flavorings (Vanilla extract, Plum Flavoring, & Black Cherry Flavor) prior to adding yeast for primary fermentation.
-Primary fermentation in the kettle or 3 Gallon BrewDemon for 14 days.
For this second batch I will use Mangrove Jack's Belgian Tripel Yeast M31 (Provides a fantastic complex marriage of spice, fruity esters, phenolics and alcohol. It is also very attenuative with a high alcohol tolerance.)
I'm going to use a TILT hydrometer on this.

Our anniversary stout was based on AB:04, one of our most sought after beers ever. This beer is slightly different each year, with subtle variations coming into play purely down to environmental and fermentation factors. What doesn't change is the rich dark chocolate, bitter coffee and chilli warmth of this monumental stout. Be really careful when mashing, as this amount of malts can get tough to sparge! Add honey into the boil, and naga chilli and vanilla in maturation (soak them in some neutral spirit to sanitise).
