heat 3.5 gallons on stove to 180 - transfer to Igloo cooler before mash
boil strike
3 gal to 162 add grain and stir for no dough balls
set temp to 152 1 hour
Stir grain every 15 min
drain mash by lifting ss bucket in brewer's edge
add cold water til sparge is 170 f to 5 gallon cooler
once 1 gallon collected, collect 1qt or 2 and pour slowly on grain bed.
Sparse by slowly dumping 1qt back on mash
boil 1 hour add hop as scheduled using a hop bag
measured 1.052 @60f 78% eff
add dry hops to fermenter and let cool overnight to ~70f
when cooled to 70F pitch yeast rack after 3 days
Rack to 5 gallon carboy after fermenting slow for 7 to 10 days
when clear and and no fermentation.
transfer bottling bucket. dissolve 5 oz of corn sugar into 16 oz of water. mix in and bottle
feel free to use 1# crystal 10 if you cant get 1 # Munich for 9 # max grain. adjust as need to hit efficiency
Updated had to add 1/4 gallon at rack so i failed to collect enough at sparge. efficiency suffered to 73% when i account for the 1/4 gallon added to secondary

Phenomenal pine, grass and citrus notes. Have eliminated 50 minute bittering, as I think it is a bit too bitter for my taste. |

Notes: This brew is an iteration of a few ciders using different grain bills (juice to honey ratios) with various yeasts.
Notes:
5lbs = 5 Gal. Apple Juice (if this is your first cider, use organic juice without potassium sorbate; it will kill the yeast and not ferment). Don't think I used maltodextrin here.
The rest of the grain bill is accurate. If a little less kick is needed, try one of the alternates below. I'm using WLP001 this time because of its tolerance for high alcohol, higher fermenting temp and because it finishes sweater (personally I prefer the dryness of the EC-1118 but then it's closer to Cyser territory).
I'm thinking ABV should be close to 10%. Also, because OG will be relatively high I'm using a starter. One could also double pitch with decent results. I've pitched one yeast pack before and still not had any problems.
Basic steps: Boil 2 gal. apple juice and add honey stirring constantly. (Honey is heavy and will sink to the bottom. It burns easily like candi syrup.) Boil juice, honey and sugar together for at least 20 minutes. Combine wort with remaining juice once temps drop to pitching levels.

Notes: The flaked corn in this recipe is actually popcorn. 3oz organic yellow corn kernels, popped in a pot (no oil used, obviously) ... weight was 2.5oz after popping (assuming .5oz water lost to evaporation during popping)

Issues/Concerns: Volume of wort less than expected, inconsistent hop additions (some with bag, some without ... FWH - 15 min additions in bags and removed at flameout ... 5 min addition loose so left in at flameout, whirlpool hops added loose), no whirlpool because of chiller in pot and new bazooka filter, hydrometer readings were very low ... after testing with plain 60F water it appears that hydrometer is broken

Notes: This oatmeal stout is fermented with extremely clean yeast providing a true expression of the malt and hops characteristics.
The malt extract is a blend of pale malt with some caramel 60, Munich, and black malt. It creates a dark wort with a smooth taste and at the high rate of addition in this beer, the caramel, honey, bread, coffee, chocolate, and toasty flavors boldly fill the palate.
The addition of oatmeal flour gives a rich, smooth mouthfeel and full body to the beer.
The Minnesota grown Mighty Axe Sterling hops infuse a delicately spicy, citrusy aroma with a floral and herbal nuance. The high oil content allows the hops flavor to last through the finish without over-riding the malt and oatmeal character of this wonderful porter.
Extract brewing can be simple and rewarding! Note that while the equipment costs far less than the equivalent all-grain systems, the cost to let someone else create your extract over extracting the sugars from grains yourself is more expensive by about 20-50%. The cost per 20oz (one bottle) of beer for this brew comes to just over $2.12.
For a fermentation airlock, run a section of the 3/8" ID Siphon Hose from the grommet on the lid to the bottom of one of the gallon jugs filled with sanitizer solution in tap water, and place the gallon jug and the fermentation bucket at the same height.
The recommended inoculation rate of this yeast is 2 grams per 5 gallons, or approximately 1/2 tsp. The yeast packet comes with 11 grams. The maximum pitch rate is 4g/5gal.
Primary fermentation ambient temperature can be anywhere in the yeast's fermentation temperature range, so fermenting warmer at around 75f will speed up the fermentation process, but the beer should not get warmer than 76f. If the fermenting liquid gets warmer than 76f, place the beer is a cooler (and still dark) area such as a basement or cooled fermentation chamber.
To bottle your beer, precondition each sanitized bottle with 2 Northern Brewer Fizz Drops. Attach a 5-8 foot section of the 3/8" ID Siphon Hose to the Fermenter's Favorites Bottling Spigot and the other end of the hose to the Fermenter's Favorites® Spring Tip Bottle Filler. Slowly open the spigot until it is fully open. Place the spring tip filler into the bottle and press the tip in on the bottom of the bottle. Fill the bottle until the liquid reaches the top. Remove the filler and the bottle will be filled to the optimal height.
Secondary fermentation in bottles takes between 14 and 21 days. 17.5 is usually a safe number of days to allow carbonation to build.
Do not be lead astray by the math provided by this recipe. Final gravity is likely to be much lower, and the ABV of this beer is likely to be higher due to the extremely high alcohol tolerance of this yeast.
Don't forget to sanitize everything including the outside rims of the brew equipment and even the outside of the yeast packet. |

Notes: This is a slightly modified version of one of my older recipes that I have decided to share. Not a lot of "Really good" Cherry Wheat beers out there but this one is the best one I have found thus far. Citra Hops really makes the difference here especially in the dry hop, for this recipe I went light but for those true hop heads out there you can go more but remember you also have the equivalent of 2 gallons of tart cherry juice in this batch.
Keep in primary for at least 7 (recommend 10 or more) days, then add you cherry juice concentrate and dry hops to the bottom of your secondary before transferring. Remember that dry hopping plus the added cherry concentrate may slow the fermentation process down so be ready for that and don't rush it. It should take about 3 weeks to complete but any time your working with fruit juice in beer it is a good idea to check it with a refractometer or hydrometer to make sure fermentation is complete.

Notes: 1. In a large brew pot, boil 3 gallons of water.
2. With the pot removed from the burner, add 3.5 lbs honey. Make sure to stir the water so the honey dissolves completely and doesn’t burn on the botttom of the pot. When the honey fully dissolved, return the pot to the burner.
3. As the liquid starts boiling again, add 1 0z Cascade pellet hops and boil for 60 minutes. After 15 minutes add ½ oz Centennial hops, After 15 more minutes add ½ oz Citra hops. After 15 more minutes add the other ½ oz Centennial hops. with 5 minutes left in the boil, add the other ½ oz Citra hops. (it helps to contain the hops in individual muslin bags)
4. At the end of the boil, remove the pot from the burner and let cool to about 90 degrees fahrenheit. Remove the hop bags and dissolve the remaining 3.5 lbs of honey
5. Add the must to a 3 gallon primary fermenter, aerate, and pitch the yeast.
6. Seal fermentor with airlock and store in a dark place at a temperature of about 70 degrees.
7. After 2 weeks, with a siphon, re-rack the mead into a sanitized 3 gallon carboy.
8. Add the cascade leaf hops in a muslin bag to the secondary.
9. After 2 weeks, re-rack, then let age for 4 months.
10. Dissolve the corn sugar in 1 cup warm water and add to carboy.
11. Fill sanitized bottles and let age for at least 2 months. |
