Edit - 3/17/20 - Brewed 2/22/20 as a scaled down batch ( supposed to be 1.1gal, excessive boil off resulted in 3 quarts into fermentor. Pre boil gravity 8 points low, but the high boil off resulted in hitting OG right on.) Initial tasting (before bottling) showed some kind of fruity esters? I dunno. We'll see what some bottle conditioning time does.
S-23 is SUPPOSED to give off fruity esters I found out, LOL. Perhaps I should have gone with S-189 yeast. Or better yet, the W-34/70 which is supposed to be virtually neutral. Bottled on 3/12/20. I also might try flip flopping the hops and use Cluster for the 60 minute addition.
Edit - July 6, 2020 - After I bottled this recipe, I brewed it again on 3/20/20 and flip flopped the hops. Kept everything else the same except I used some "mystery malt" that was given to me instead of the pilsner base malt. The guy said it was "just "2-row" " but didn't have the heart to tell him many grains are 2 row and that it could be anything LOL. In any case, the second batch I had a lot more volume in the mash and sparge (rinse) and ended up with about a gallon into bottles. 3 weeks carb and then into the fridge where they still are. I am planning to have two friends over to do a side by side with Yuengling Lager to see what's what.
Edit - Sept. 19, 2020, Taste tested these two side by side with Yuengling lager also and other tasters said the "mystery malt" one was preferred, I felt that that one was too "fruity" or something. I just don't care for that mystery malt I think. While tasting we mixed the two in the glass and it didn't taste too bad. So I brewed a third 1.1 gal test batch with half pilsner and half mystery malt in early August. It is still in the fermentation chamber. The first version (this recipe) was more malty IMO and tasted better. 9/19/2020 I have a starter of Fermentis W-34/70 German lager yeast going for tomorrow's brew of a proper 5.5 gallon batch of this. Hopefully this will become one of my staples.
Edit - 1/2/21 - Finally tapped the keg several weeks ago. Have been nursing this as it is so good. I don't want it to go empty. Purchased supplies to make another batch, the only change made was the main malt from Weyermann to Dingemans. I'll note any changes in flavor. Also, this tastes similar to Yuengling, but it is definitely its own lager. I'll leave the name on here "Yuengling Style Lager", but at home I'm calling it "My Pennsylvania Lager" since I changed the recipe enough and it's no longer really a clone, even though it's quite similar. |

Notes: This is a first attempt to clone Sapporo Premium Lager from Japan.
Basis of recipe:
1) This beer uses rice as a main ingredient. I'm using rice syrup.
2) Buckwheat is also an ingredient. (Alternatively, Sorgum)
3) To legally be a "Premium" beer in Japan, it must be brewed with at least 75% barley malt.
Using the calculator and my stardard equipment sizes, I put in 900g of rice syrup (2x 450g jars), 500g of buckwheat (1 bag), and then barley malt until it hit the 4.9% abv of a Sapporo. That comfortably came to 76% malt. (I don't know yet if the buckwheat and rice sugar are in the correct ratio. But I don't want to weight out sticky syrup. So two full jars.)
My kettle is an Arsegan Easybrew 50. Similar (identical) to many other imports (Brewmonk, Hopcat, ?). My fermenters hold 30L and this fits easily in the (actually 45L) kettle. So that determines my batch size. 30L of wort after the boil usually produces 4 cases of beer (ie. just under 28L after racking and bottling losses.)
W-34/70 yeast was chosen because of the very high attenuation (with light grains) and the fact that there's some in my fridge. Any good lager yeast will do, but the drier the better.
Sapporo invented the Sorachi Ace type of hops. They never sold a beer brewed with it. They prefer to use "American" hops according to what I've read. Estimates of the IBU of a Sapporo range from 18 to 22 IBU. So I'm using Simcoe hops (one of my favourites) and 20 IBU as the target. With such a dry beer, there should be a subtle bitter finish, but not too much. You might consider 15 IBU but I think 25 IBU would be too much.
Sapporo has no hops aroma when you drink it. Thus, no second drop for aroma hops. Only bittering.
The malt calculations started with only Pilsner malt. I added Vienna malt to bring a bit of colour and maltiness to the beer. These still keep the end result very dry. This is the least malt I have ever used in a 30L brew, so not sure what the result will be. With a total of 3.9kg I don't think it will be too malty. I normally use 7.5 to 8.5 kg for a 30L brew.
I will adjust the recipe and update the notes in the future.

Notes: Used whole leaf Amarilo hops in boil. OG was low 1.055 vs 1.078?? Added water to mash due to temperature was 148 vs 152. Reduced Sparge water to compensate. Collected about 5.5-6 gallons wert.
Dry hopped on 2/26/12 with a total of 2.23 oz of Citra/Centenial/Columbus/Amarilo hops and left it in primary due to travel. Some activity still present.
Kegged on 3/7/2012 - Great hop citrus aroma and taste. nice body and sweetness of a red ale. There was about half to 3/4 of a gallon extra left after filling 5 gal keg. |
