Notes: Grain Bill was derived from a Bloodline Blood Orange Recipe
Hops for the boil were a combination of what I had left from prior batches.
Added Citra for the Dry Hop.
Kumquats...Thoroughly rinsed and then soaked the whole kumquat in a One Step Sanitizer for about 5 minutes then used a colander to rinse them. Stored in the freezer to be added later. Added whole frozen Kumquats to the secondary with the dry hop in a fine bag. |

Notes: This is a clone of Sexual Chocolate by Foothills Brewing Co., as found on TastyBrew.com blog (http://www.tastybrew.com/forum/thread/154676); as the finalized with a few tweeks to the recipe.
1: The blog said to NOT add cocoa powder after trial due to graininess in the final beer and the need to chill and re-rack, but he used 6 oz at secondary, dry. I shall use 3 oz, mixed with 6 oz boiled water that will hopefully moisten the cocoa and reduce graininess in the final product and encourage settling during secondary.
2. I'm going to use homemade chocolate syrup in place of Hershey's Special Dark Chocolate Syrup at kegging.
3. My Homebrew Supply Store did not sell Wyeast anymore; so while the original recipe uses Denny's Favorite 50, the closest strain by White Labs is California V. So, we'll see how this goes! |

** YEAST STARTER **
1. Approximately 24 hours prior to Brewing, make a DME solution (1.58lbs DME with 2.4 litres water).
2. Allow solution to Boil for ~15 minutes.
3. Put into a mason jar or temperature proof glass vessel.
4. Apply Ice Bath until Temperature reaches ~65F.
5. Squeeze 1 packet of WLP500 into DME Solution.
6. Cover with Aluminum Foil + Swirl ~ every 1-2 hour until ready to pitch. Try to maintain yeast between 64-70F.
**Pre-BIAB Instructions**
1. Put Maris malt and flaked Oats into muslin sac or two sacs.
2. Put remaining milled ingredients into one seperate muslin sac.
3. Put hops into muslin sac.
4. Put Cherries into muslin sac.
** MASH or BIAB**
PRE-HEAT STRIKE WATER - 4 gal of 163F water
PRE-HEAT SPARGE - 3 gal of 170F Water then put on a lid.
(conduct Simultaneously)
Water Volume: 7 gallons for 1.5 lb/qt ratio.
1. STRIKE WATER: 163F.
2. Add UK Maris malt and Flaked Oats @ 163F.
3. Allow Temperature to fall to 152F prior to closing lid.
4. Maintain mash temp for 45 minutes.
5. Raise temp to 158F.
6. At 50 minutes into mash, add the rest of the grains.
7. Maintain temp @ 152F for the remaining 25 minutes.
8. Check Mash pH ~60 minutes into Mash.

9. Add Salts if needed.
10. Total Mash Time: 75 minutes
11. Begin Sparge!

** SPARGE **

5. Measure pH of the solution coming from Mash Tun @ end of Sparge.

If you prefer to use liquid yeast, Wyeast 1056 American Ale or White Labs WLP001 California Ale are excellent choices
Add 500mg potassium metabisulphite to 20 gallons water to remove chlorine / chloramine (if required).
Water treated with brewing salts to: Ca=110, Mg=18, Na=16, Cl=50, SO4=275 (Basically Randy Mosher's ideal Pale Ale numbers with slightly less Sulphate). For complete details on how to adjust your water, refer to our step by step Water Adjustment guide.
1.5 qt/lb mash thickness.
Single infusion mash at 150F for 90 mins.
Raise to 168F mashout temperature and hold for 10 mins.
~90 min fly sparge with ~5.6-5.8 pH water (measured at mash temperature). Collect 14.9 gallons.
Convoluted counterflow chiller
BUY NOWBoil for 90 minutes, adding Whirlfloc and hops per schedule. Lid on at flameout, start chilling immediately.
Cool the wort quickly to 66F (we use a one-pass convoluted counterflow chiller to quickly lock in hop flavour and aroma) and transfer to fermenter.
Aerate well. Pure oxygen from a tank may be used at a rate of 1 litre per minute for 60 seconds.
Pitch yeast and ferment at 66-68F (wort temperature). We use modified stainless fermenting buckets in wine fridges.
Add dry hops once fermentation is nearing completion (i.e. 5 points from terminal gravity). Dry hop for 5-7 days total. |
