| Notes: This English Extra Special Bitter is characterized by the mashing of a single malt (Best Pale Ale - Heidelberg), followed by the generous hopping of Summit, Cascade, Citra and Sincoe hops. This beer underwent additional late hopping (dry hopping) on the 5th day of fermentation with the Cascade hops. It presents dense and persistent white foam, high carbonation, moderate body, earthy aroma, but not citrus like IPAs, refreshing tropical flavor balanced between malt and hops. Harmonize with strong cheeses like, brie and gorgonzola and with roasts, like Iberian black pig. The high alcohol content, the bitterness of the hops and the high carbonation, help to cut the fat and clean the taste of the side dishes, so that the next bite is as tasty as the first. |

First pour of the West Coast Pale Ale came out with less carbonation than I hoped due to serving temperature. For a while I thought I was a victim of "Chill Haze" but after referance found out that this is it's proper Hue. Taste wasn't too shabby, I also expected way less. Compared to a Less Citric Blue Moon with a much dryer finish. Not bad for my first Home Brew. |

| Notes: Strike Water Volume=30L. Strike temp=67C. Mix tap water and RO water in 0:100 ratio (0L/30L). Add 2 grams of calcium sulfate, 13.5 grams of liquid calcium chloride, 0.5 grams Magnesium sulfate, and 5ml lactic acid. Mash ph estimated to 5.3. Chill boiled wort to 18C. Add smack pack without starter (Wyeast 1318). Ferment @ 19C. |

Notes: This brew is in honor of the victims of Hurricane Irene, which wiped out a large amount of infrastructure in Vermont and took the lives and livelihoods of many fellow New Englanders. Starting with a basic American Amber recipe, the hops are tweaked to add more earthy and piney characteristics, reminiscent of the enthusiasm for outdoor exploration and hard work in Vermont. In secondary fermentation, the beer is racked onto a gallon of pure Grade B Vermont Maple Syrup; there's a possibility for the re-starting of fermentation here, which I've never experienced before, so the final alcohol will probably by higher than Brewprint calculates.
Also, $50 will be donated to the Chester Andover Family Center, an amount equivalent to the ingredients cost for 5 Gallons of this beer. Google the center and see the great work they do for the community as a food bank and supplier to the needy. |

Very excellent fragrance, mouth feel similar to true English cask beer, nice bittering and clean color, if you like smooth very slight sweet and bitter hopped beer this is ideal, one of my better masterpieces |
