Notes: Very short boil (20min) to leave proteins for the wild yeast to eat.
Week 1: Primary fermentation with ale/lager yeast (plastic carboy or whatever).
Week 2: Rack to secondary, still ale/lager yeast (plastic or whatever).
Week 3: Rack to a glass or PET container (air tight, glass is better to sanitise the wild yeast when finished). Add wild yeast. Leave for at least 6 months or more (years?). Put in a cool place, although some say room temp is ok. I leave mine in room temp during summer and it could reach above 25c.
3 months before bottling: Add fruit. 200 grams pr liter beer. My fruit has been frozen, then pasteurised in a kettle at 80c for half an hour.
Add oak chips for the last 2 weeks.
Ale yeast: Whatever, but a Belgian ale yeast is preferred (because of esters). Or Lager yeast. 1 vial is good, no starter.
Wild yeast: WYEAST 3278 BELGIAN LAMBIC BLEND, or whatever brett.

Notes: Slightly disaster filled first ever partial-mash brew-day. Intended to brew Sara Carter's Bombay IPA. Accidentally brewed this instead. Got lower than expected efficiency. Correctly calculated how much DME to add - but then inadvertently added 1Kg too much giving a much higher than expected OG.
This recipe was very bitter at the lower OG, so hopefully it will turn out reasonably well anyway. Even in the worst case scenario, I'm pretty sure I made beer.
90% attenuation based on what I actually got. Notty is amazin'. |

Chai Spiced Tea Ingredients
1 vanilla bean, split and scraped
2 cinnamon sticks
2-inch piece of ginger, peeled and sliced
5 whole cloves
2 star anise
24 green cardamom pods, split
1 black cardamom pod, split
2 tsp. black peppercorns
1/2 whole nutmeg, roughly chopped
1/4 tsp. fennel seeds
Preparing Spices
Bring about 1 quart filtered water to a boil, then pour over spices and cover in a separate container.
Let steep for 15 minutes, then strain to remove spices. Cover tea and keep chilled until used.
I blended in about 2 cups (473 milliliters) of this liquid in the 5-gallon (19-liter) batch. But you want to do it slowly, mix it well, and taste it. Different people have different tastes, so you're looking for a nice balance without being overpowering with the spices.

Notes: 1a) Get the sour mash pH down to 4.5, by adding phosphoric acid.
1b) Boil for 5 mins, chill to 100F, & add 11 capsules (20B cells each) of probiotics.
1c) Leave it aside for a day or so, till it reaches 3.1 pH.
2a) Boil for 25 mins.
2b) Pitch yeast & ferment as normal.
3a) Add the mango + pectinase, & secondary it for a few days, after fermentation is done.
3b) The mango should naturally carbonate the beer. If not, burst carb as usual.
4) Cold crash for a few days, before serving. |

First pour of the West Coast Pale Ale came out with less carbonation than I hoped due to serving temperature. For a while I thought I was a victim of "Chill Haze" but after referance found out that this is it's proper Hue. Taste wasn't too shabby, I also expected way less. Compared to a Less Citric Blue Moon with a much dryer finish. Not bad for my first Home Brew. |
