Our latest concept beer, AB:24 is a huge Baltic Porter, brewed with coffee and muscovado sugar. Do not substitute the muscovado sugar with white sugar. It lacks the molasses (black treacle) component that comes from only being partially refined.

this beer came out pretty good, not as good as the previous batch though. the differences between this batch and the last are :
* this batch used 0.5 oz warrior bittering, the previous did not
* this batch used citra instead of mosaic, but in the same amounts and times
* this batch had centennial split up more. there was more shifted from later stages to earlier in the previous batch
this one did come out with a little more bitterness which was intended. but it doesnt slap you across the face with hops like the last one did.

reworking this for a round 2! this time using citra and leaning more on centennial. everything else - water, grain bill, yeast, etc. will keep exactly the same!

this brew (bling bling 1) came out fantastic! couple execution items to clean up - didnt seem to clear out fully, and 2nd half of the keg had faint oxidation.
the hop combo was really nice, mosaic dominated and there was no bittering. next time consider going 2/3 centennial 1/3 mosaic

finally about to brew!
decided to go with corn instead of rice. adjusted the water profile. its a little high on calcium but should be locked in to the 1:2 cl to so profile adjusted from tap water.
thinking about mash hopping?? maybe not for this since lager yeast

i think i have the malt bill down, 80-20 pils to rice. would like to understand the difference between using flaked rice vs minute rice (any flavor difference? any price difference?) and also between flaked rice and flaked corn (flavor difference?)
also need to figure out water, im guessing i can use my west coast ipa profile
also need a plan for hops. what bitterness we aiming for. going fruity/juicy? or classic american hops?
will go with 34/70 at 68 degrees

Notes: Hops:
As only very little hop is used and hardly any hop aroma is perceived in the style, you can use whatever hop you find at home. But be careful: Stay below IBU 5 to prevent impeding the lactos.
Boil:
Traditionally Berliner Weisse is not boiled at all. This however was boiled ca. 30 mins to prevent DMS.
Lactos:
I usually grow my own Lactos. I take a hand full of malt and put it in a simple, warm DME wort. To give the lactos a headstart, I usually add a little lactic acid (80%, from Amazon). That way only acidophile microbes will grow in the wort. Keep it in a warm place – I now use a Yoghurt maker to keep the temerature between 25-35°C, but had success with a thermos flask, too. Every morning, I pour away about 1/3 of the wort and replace it with new wort. After one week I stop pouring away and only keep the temperature between 25 and 35°C. As soon as it tastes lemony sour, it's time to brew. Pour the sour wort right into your fermentor at primary fermentation.
Brett:
Berliner Weisse traditionally incorporates Brettannomyces. I got my strain from two bottles of Brewbaker Jahrgangsweisse 2013 – a commercially brewed Craft Berliner Weisse from germany. Fits the style perfectly. |
