Notes: Moderate to high body with a creamy rich mouthfeel. The aroma is a mix of cold brew coffee, malt roastiness, and a faint sweetness. The flavor follows the aroma, with light roast, caramel sweet, chocolate, and a hint of dark fruit.
For my cold brew, I added roughly 120 grams of coarsely grounded Venezuelan single bean (light roast) coffee to 4 cups of water and let sit in the fridge for a couple of days before adding to the keg before packaging.
This has been one of my favorite stout recipes so far and the aroma is so incredibly rich and pungent. |

Adjusted for first brew experiment with ingredients we had on hand.
Original recipe is the same grain, zythos hops .25 @30 and .75 @10, and WLP644 yeast.
8/4/21 - Changed hops to El Dorado .5oz @ 30min and .5oz @ 10min. Changed pineapple from 2 46oz cans to 3 46oz cans. Could substitute 5lbs of fresh frozen pineapple as well. Changed 2-row to Pilsner and adjusted from 8lbs to 6lbs and changed Wheat from 3lbs to 5lbs. Added 1lb of flaked wheat. |

Notes: Trying my own recipe build to hopefully create a NEIPA or NE style Pale Ale. The goal is to have the hops burst with a fruity and tropical taste and aroma with a medium body but slightly soft mouthfeel.
Still toying with the recipe in hopes of making it 5.5-6% abv |

Steep grains at 150 F for 30 minutes.
Add DME, LME and bittering hops and bring to boil
Boil for 45 min
Add flavoring hops and irish moss
Boil 13 minutes
Add aroma hops
Cool to below 80 F
Add water to obtain 6 gallons
Add yeast and aerate
rock and roll
Adjust priming sugar based on final volume to be bottled

Notes: Batch split into 2x fermentation bins.
1 with a full dried sachet of Mangrove Jacks - Bohemian Pilsner yeast, and 1 with 2/3rd of a US-05 sachet.
Unfortunately, I made a bit of an error, and used 'LME' in the cal, instead of 'DME'. Didn't realise until I got to taking a gravity reading in the fermentors. OG was way higher, due to the concentration of DME over LME. So had to add approximately 1.5L of additional water to each 10L bin to bring the gravity down to 1062.
Due to this the IBU's have also been reduced.
Muppet mistake!
After 5 days I check the gravity of the IPA (1015), then dry hopped it for 3 days, with 50g of Equinox whole leaf. Once done, it was crash cooled for 24 hours at 3deg C.
When the IPA was being crash cooled, the IPL was been moved into the cellar for diacetyl rest at 17deg C for 72 hours.
