Leave enough room in the fermentor for an extra 1 gallon.
Save belgian candi sugar and dextrose additions to add to fermentor starting at high krausen. Dissolve and boil in 1 gallon of water - add 1 quart per day.
Mix cocoa nibs and ancho chilis and pulse in a food processor. Add to secondary in a muslin bag.
After adjunct rest, rack to tequila barrel for aging. |

Notes: Mix 4 gallons of spring water with 18lbs of honey. Add nutrients and yeast. ferment at 68F.
After fermentation, add crushed campden tablets and potassium sorbate to halt fermentation. Wait at least 24 hours then transfer to a secondary and back sweeten with honey to taste.
At this point you can bulk condition or bottle condition. I prefer to bulk condition for a few months then bottle condition for a few more.
It is a super easy recipe and makes a great final product. If you want a melomel you can simply back sweeten with the fruit or berries or your choice. |

| Notes: This turned out awesome, maybe a little sweeter than I anticipated but really good. After fermentation was complete (2 to 3 weeks), Cold Crashed for 24 hours and then added to a 5 gallon Balcones Bourbon Barrel for 7 to 8 months to age. Then kegged for a couple weeks to mellow. I then used a Beer Gun to bottle half and left the remaining in the keg to enjoy! |
