Notes: In the Ardennes forest between France and Belgium, they say gnomes used to supply the locals with high quality beer. But what were the gnomes drinking? Alternative grain beer obviously. Millet, rice, and buckwheat with a handful of new world Azacca hops and yeast from the Ardennes. It's Gnome AF.

initial recipe creation! going with a very basic simple recipe based on craft beer & brewing link. i would think maybe some carapils for head but they did not suggest any. should probably bottle condition this? could possibly brew a double batch of this and oak age half. or possibly brew 7 gallons (single fermenter) and bottle straight from fermenter, add oak, then bottle the rest a week or so later? or keg the oak version if fermenter space needed.

| Notes: even though I went with #2 on water calc which had 2 more G of sparge I was about 1 G low on pre boil vol. Did only .25 G sparge on mash #1 and added the extra 1G+ on mash #2 which still had me starting at only 5.75 instead of 6.5 so calc was actually 1.75 G low or so (maybe more, not sure of my notes completely. But, be aware I may need more water than the recipe calls for when doing re-iterated mash |
