Notes: Made three 4L. starters this time to try to reach ProBrewer 1.75 recommended 1966 Billion cells. New yeast for us. Made the starters and fermented them at 55 deg. Also new for us. Seemed to make not quite as much yeast. We'll see...
observed mash pH was 5.25 ish - battery might be getting low
mashed 30 minutes at 146 and 30 at 155.

Preboil was very high - 1.054 we threw out a bunch of wort and replaced it with water!

Into the fridge at 76 after chilling. Had to bring it down to 45 for pitching. Pitched all 3 starters about 30 hours later when the temp was 47. Activity apparent in about 30 hours. |

Notes: First one (actually, 2nd one, but I over did the sugar of the first batch). The original recipe is no longer available as the writer modified it with other hops, so I decided to write it for my own use. Fermented with Fermentis Safeale K97, which absolutely rocks. BTW, as this is the second time I have done this I wasted lots of worth and beer due "problems" with tubing and such (and OC measuring of OG/FG). In the end, I had OG of 1.052 and FG of 1.012. This was reached in a week, but I let it alone for another one. Temperature wise, I kept the fermenter at 68-70 F (18-20 C). It is so easy to drink it that I am gonna be sorry to drink my last bottle, but I need it for my third brewing experiment. About things to improve, 1) head retention, 2) more CO2. Used calculator, but froze the beers after 15 days because I could not wait. One week more (or just some more corn sugar) would have worked better.
Note 1: The beer is nice, light, and citrusy, with some pine notes. Color-wise, it is a tad darker than the style calls for. Bitter-side, it is perfect but I brew at 9000 feet (2800 meters) over the sea level, so I think hops utilization rate is low. No crazy haze (used Irish moss).
Update 9-10-2020: updated the recipe for new kettle. Playing with malts as I ran out of Vienna, but have some other malts that I can use. Added flaked oats as I got good head retention with other recipe. I will ferment with S-33 to see how yeast makes a difference.

Notes: Fermentation Profile: 14C for 2 days, 10C for 7 days. Then second staged to a corny keg. Increase 3C roughly every 12 hours until you get up to 20C. Leave at 20C for 2-3 days, do a gravity reading to ensure fermentation is complete before ramping down the temp 3C every 12 hours until it reaches 0-1C. Leave for 3 days before gassing/drinking. This is based on the speed lagering methods as discussed on the Brulosophy Blog.
1 pack of dry W-34/70 to 100g of DME to 1.2 litres of water (preboil). 15-20C for 12-18 hours, 3C for for 6-10 hours.
Review Added 11.4.17 - So this is the first time I used the 'speed lagering' process and I must say I'm very happy with it. I 2nd staged and did the temperature ramp up/ramp down in a sealed corny keg (no airlock). The stuff was ready to gassed and drinkable right and the end of the temperature ramp down. For this recipe I originally planned to use Saaz hops but stuffed up, turned out I didn't have any (must have got drunk again and not updated my stock list), hence the use of Hersbrucker & Halleratau in this 'Bohemian' Pilsner. The end result was a delicous varient on a traditional recipe, came out a little creamy, I served the keg at a work party to rave reviews.
