C. Add apricot puree during secondary fermenter stage, not in the active primary to avoid scrubbing of the apricot aroma during active phases of fermentation.
D. Unlike the popular but bland and tasteless beers made for Americans, this beer is Satiating, Satisfying, and Stupendous.
E. Final gravity was much lower than the computer prediction. After 21 days in fermenters, the FG was 10.05, so the ABV is actually 5.91%.
F. A little over-carbonated on this batch, which I attribute to the higher bottling temperatures(76F).

Don't have enough golden promise - will need to use extract to hit target gravity, predicted 850 g.
Mash:
Mash ph 6.0 - forgot to adjust eek! took mash gravity = 1.054. Mash volumes = 24 L added, 7 L predicted to be retained by grain bed, leaving 17 L to transfer, suggested to sparge no more than when brix down to 2.4 (OG 1.010). Actual brix out 6. Boil volume 26.5 gallons, 12 brix, og 1.048.
Boil/Target Gravity:
Boil gravity is lower than anticipated, will give 35 L batch at OG 1.031. CV = CV calculations and the above calculator indicate that we'll need to add between 2000 and 3500 extract to hit target boil gravity of 1.080 brix 19.3 (26.5 L), which will then give 35 L batch at target OG of 1.060 brix 14.7.
Added 3000 g light LME to reach 19.2 brix at 28.4 L final wort volume. CV=CV calculations indicate we can liquor back 10 L to final volume 38 L to reach target OG of 1.060. |

Notes: If you like whiskey, bourbon etc., this strong ale is for you. I typically throw in a few spare hops for Anesthetic purposes, but not for flavor since I'm replicating whiskey. When done correctly, this beer is phenomenal.
This software assumes you are using brewers malt. Distillers malt is different: it is 45 PPG with very high Diastatic power (220). Should get 1.1 OG and 1.05-1015 FG for a very dry strong beer. ABV should be 10.50%. Make sure you use a yeast calculator so that there is Enough volume and add plenty of O2 and nutrients.
Upon completion of fermentation, freeze and drain off remaining alcohol and beer. Should be around 12 to 18% ABV. A 2nd freeze will increase the ABV depending on the cold temp of your fridge/freezer. You should end up with 20-30% of original volume.
