| Notes: Combine all ingredients, mix, and aerate thoroughly with a kitchen mixer or immersion blender. Creating about 1 quart more than 5 gallons of must will allow you to completely fill your secondary 5-gallon carboy while leaving behind all of the lees. Stir vigorously with each addition to de-gas the mead. Transfer to secondary when fermentation has completed (21–28 days, may be slightly longer for 1056 yeast). Age 6–12 months. If the mead has not cleared completely, you can fine with Sparkolloid per manufacturer’s instructions. One more racking will help minimize sediment in your finished bottles. Bottle only after all signs of fermentation activity have ceased. |

Notes: Heat steeping grains in 4.5Gal in brewpot until reaching 170F and pull out grains. Bring to boil, add DME, then preboil 5 minutes. Then add Saaz hops and start 60min boil. With 30mins left, add 1lb of Chinese Rock Sugar. With 20mins, add EK Golding hops and Irish Moss. With 10mins left, add Saaz hops. With 5mins left, add final pound of Chinese Rock Sugar. At flameout, add dried chamomile and whirlpool for 10mins, then cool in ice bath. Top off carboy to 5Gal and transfer dried chamomile into carboy, pitch yeast (STARTER), ferment at 70F. After fermentation takes off in about 1-2 days, bring 2 cups of water to boil and add brown sugar, add to carboy. After 10 more days, beer is ready to bottle. 2 weeks to condition.
*Soft Candi Sugar is Chinese Rock Sugar (mixture of refined and brown sugars and honey).
*Brown sugar is light brown sugar.

Notes: - I scaled the hops from 5gal to 6gal by increasing 20% by weight, based on the 20% increased water volume, not grain weight difference, which I increased by 40% (20% above the 20% added to scale to 6 gals batch) to get the ABV up a bit.
- Mill grain twice
- Don't leave heat on after meeting mash-in temp (163).
- Sparge and drain while boil kettle heats up.
While the grain is mashing, start the invert sugar.
- heat .6 lb of cane sugar (not table sugar) in .9 cup of water. As it’s heating, add .15 teaspoon citric acid
- simmer, stirring frequently, for at least 20 minutes. The longer it simmers the darker and thicker it will be; try not to simmer it for more than 30-40 minutes for this beer.

| Notes: It's President's Day; a perfect holiday to brew on, especially since many of our founding fathers used to brew their own beer too. At one point, in early American history, brown ales were as popular as commercial lagers, like Budweiser, are today. I created and brewed this recipe this morning. It's is a solid Northern English style brown ale. The use of the brown and victory malts will contribute the nutty flavors and the use of 12 oz of honey and crystal malts will add subtle sweet flavors that will make this a very delicious beer. Ended up being quite good - Al asked for 3 bottles
It was fairly bitter - worked well with the water treatment
Nice hop taste to it, Motueka a good choice with Sorachi
Sorachi taste not overpowering - could have tipped the balance a bit more towards it |
