Notes: This recipe is completed on the stovetop with pots, no beermaking equipment is needed. No recirculation is needed either. However, the brewing equipment can be used.
1. Ensure there is enough ice for this recipe. 2 Cups are needed.
2. Crack the rice and boil for 30 minutes in 1.7L of water on the stove. Once this is finished, move to step 2. This is to ensure there is time to let the rice naturally cool on its own.
3. Adjust pH of 15L of water to 5.3 and heat to 50 degrees Celsius. Crack the grain and add to the water and allow to rest for 30 minutes.
4. Cool the rice solution down to 70 degrees Celsius and add this to the malt. Allow to digest for 120 minutes at 67 degrees Celsius. Monitor temperature with an alarm.
5. Strain the mixture through a BIAB cloth and remove the grain. Sparge with 3L of water and begin to boil the wash.
6. Follow the hop schedule and adding of adjuncts at 15 minutes.
7. When the boil is over, add the ice to the wort and cover, allowing it to cool naturally, or in the fridge, to the desired temperature. Add wort to a clean and sanitised fermenter and aerate.
8. Add the yeast to the wort and seal. Ferment at 20psi for 3 weeks. Ferment at 10 degrees Celsius for the first 4 days.
9. Once the pressure reaches 5psi, quickly add the dry hops and re-seal to complete the rest of the fermentation. |

Notes: - I scaled the hops from 5gal to 6gal by increasing 20% by weight, based on the 20% increased water volume, not grain weight difference, which I increased by 40% (20% above the 20% added to scale to 6 gals batch) to get the ABV up a bit.
- Mill grain twice
- Don't leave heat on after meeting mash-in temp (163).
- Sparge and drain while boil kettle heats up.
While the grain is mashing, start the invert sugar.
- heat .6 lb of cane sugar (not table sugar) in .9 cup of water. As it’s heating, add .15 teaspoon citric acid
- simmer, stirring frequently, for at least 20 minutes. The longer it simmers the darker and thicker it will be; try not to simmer it for more than 30-40 minutes for this beer.

Ended up being quite good - Al asked for 3 bottles
It was fairly bitter - worked well with the water treatment
Nice hop taste to it, Motueka a good choice with Sorachi
Sorachi taste not overpowering - could have tipped the balance a bit more towards it |

| Notes: It's President's Day; a perfect holiday to brew on, especially since many of our founding fathers used to brew their own beer too. At one point, in early American history, brown ales were as popular as commercial lagers, like Budweiser, are today. I created and brewed this recipe this morning. It's is a solid Northern English style brown ale. The use of the brown and victory malts will contribute the nutty flavors and the use of 12 oz of honey and crystal malts will add subtle sweet flavors that will make this a very delicious beer.
