Notes: Color will come from a traditional triple decoction of the mash.
Mash in 122F and hold for 15 minutes.
Decoction 1: Remove 4.4 gallons of 1 part liquid: 2 part grain by volume. Boil for 15 minutes and return to mash. Raise mash temp to 145F.
Decoction 2: Remove 4.4 gallons of 1 part liquid: 2 part grain by volume. Boil for 20 minutes and return to mash. Raise mash temp to 162F.
Decoction 3: Remove 4.4 gallons of 1 part liquid: 2 part grain by volume. Boil for 25 minutes and return to mash. Raise mash temp to 170F. |
