Notes: A No-Chill BIAB big ale, meant to be very mouthy, creamy, and filling.
Extra half gallon strike water to ensure there is enough wort to completely fill 5 gallon HDPE cube jug with the longer boil time.
Boil time extended to 90 minutes to boil off DMS precursors. Hops reduced by 20 minutes from normal
Hot wort at 180f goes straight to 5 gallon jug filled to top with all air squeezed out, to sit overnight. Overage is canned in quart mason jars for starter base for future batch
Fermenter is Big Mouth Bubbler. Yeast is a one quart starter of harvested yeast from previous batch. Mother is BE-256 and HotHead but over several generations the BE-256 has become dominant due to temperature range.
Fermentation is at room temperature, about 72 or 73 degrees except when it is cold outside, then around 69 degrees.
Optional, add raspberry, mint, espresso, cocoa, etc flavorings within reason near the end of the boil.
Calculator says 1.020 FG but it usually finishes around 1.026 instead. |

Notes: 2 malts / 2 hops - Easy to make, inexpensive and tasty to drink. Great for the older drinker and those not inclined to hoppy beers.
This brew was a tribute brew for Jim Payne, AKA the Old Fart Brewery in the UK. Jim passed in February of 2019. He was known for his ingenuity and love of making a great inexpensive beer. Extra Special Bitters were his "go to " style.

Notes: Description:
With a BU:GU ratio of .50 this beer is balanced between hoppy bitterness and malty characteristics. Dry hopping and late addition hops keep the aromatic qualities high while restricting the perceived bitterness allowing for a more drinkable beer.
Base malt is a premier quality, 2-row, spring harvest, pale malt that imparts golden, sweet, and slightly biscuity flavors. Specialty malts add light golden hues, mellow, candy-like sweetness, and a subtle toffee flavor - similar to spun sugar. The addition of Carapils creates a persistent foamy head. Flaked oats build distinct full-body and subtly creamy texture.
Verdant IPA yeast leaves a soft and balanced malt profile with slightly more body and prominent notes of apricot and undertones of tropical fruit and citrus which merges seamlessly with hop aromas.
Bold orange, grapefruit, melon, and peach flavors and aromas are expressed from Amarillo dry hopping. Mid-ground flavors and aromas of lemon and lime come from citra hops. Further complexity comes from the addition of Wai-iti hops which express fresh peach and apricot characteristics with a hint of freshly squeezed limes and top notes of mixed citrus and spice.

For high sulfate in tap water, filter through carbon filter.
Water chemistry is nearly a balanced ratio between chlorides and sulfates with sulfates being slightly less to help cut down on perceived bitterness and chlorides being slightly more to help bring hop aromas forward. Calcium helps to soften water mouthfeel and give yeast a strong vibrant fermentation.
Priming CO2 is moderate at 2.5 volumes, however, CO2 impregnation can be adjusted to fit personal preference.

added hungarian oak cubes that were boiled in water and then dried. left for 30 days
on day 30, added vanilla beans, giaradelli 70% cocoa and 2 3" long mexican cinnamon sticks that had been sous vide at 148F for 1 hour. left for 14 days
on day 44, racked to new vessel and added vanilla beans back into beer. left for 14 more days.
on day 58, added toasted coconut to vessel. left for 14 days
racked to keg and carbonated at 10psi at 40F. |
