Notes: Muntons Wheat DME is 55% Wheat, 45% Barley Malt
Using the above assumptions, fermentable quantities adjusted to achieve ~20% Wheat Malt.
After first 24 hrs of fermentation, raise temp. to 78-80 deg F.
Submitted bottle for pre-qualification tasting for 2015 Indian Valley Beer festival homebrew competition. Out of 25 entries, was 1 of 12 chosen to go to the event.
BJCP beer judges comments:
Farmhouse beer, a lot of carbonation, fantastic spicey character, almost too spicey for a Grisette. Doesn't taste table strength. Good heavy minerality. Exemplifes the yeast character well. Mineraly astringent finish. A little chalky. Overall good.
Turned out great! Won 1st place Popular vote and 1st place Judge's vote at 2015 Indian Valley "Brews for Books" Beer Festival. |

Will pitch the starter and an additional pack of yeast.
Lagered for 5 weeks at 34F
Finished at 1.021= 4.5%, don't think I pitched enough yeast.
Kegged on 5/2/2016 with 30psi, shook for a couple minutes and let it sit. Will shake every day at 30 psi for 4 days then see.
Tastes really good! easy drinking. chococlatey and roasty with a clean finish.
Next time i brew this i will use less dark malts..

Notes: In a separate pot, mix the adjunct with about 30% of its weight in pale malt. Add 4.87 qts 173 ° water until the temperature stabilizes at 155 °F . Hold this temperature for 15 or 20 minutes. After the 20-minute rest, begin slowly raising the temperature to a boil and boil it for 40 minutes.
While the cereal mash is at 155 °F mash in the remainder of the malt in a separate kettle and stabilize it at 122 °F for a protein rest.
When the cereal mash finishes boiling, stir it into the malt mash raising the temperature to 153 °F and let rest.

Notes: Very dark and not too bitter, medium body, smooth mouth feel but has strong roast grain finish. I have been brewing this every year in July since 2009. This 15 gallon recipe will scale down to 5 easily. Usually fermented in two separate vessels, blended when completed and kegged. An alternate method I like is to split off 5 gallons when racking for secondary fermentation and rack onto 1 to 2oz of American Oak Chips. (Nice hint of the oak and I prefer to age this method two or three months) |

Showcasing one full pound of Simcoe hops.
Add corn sugar to boil at 35 min. Use pellet hops, without hop bags, for the entire recipe. End flavor is extremely juicy, with an orange juice + grapefruit juice character. Great for a breakfast beer! ;)
Bitterness decreases rapidly after brewday. This is a house-party beer that is good kegged or bottled and consumed within a month.
For full attenuation, pitch two packs of non-rehydrated US-05, with pure O2; ferment at 67F +/- 1F. |
