Notes: biterness slightly high, I want to lager this beer. Styrian goldings' spiciness well accommodated by dubbel and quadrupel.
Should be not too dark, rather deep brown.
huge dark fruits, prunes, raisins, figs, dates, grapes. Slight oakiness.
Focus on the quality of candy sugar! Dark fruits come from there, only followed by caramel from malt.
Perhaps exchange some pale ale to lighten the color and accommodate more specialty malt.
Keep the grain bill simple, most of the color comes from caramelized sugar (but not burnt!). don't be afraid of long boil - 120-150 min to enrich in melanoidins.
Fermentation temp. Start at 14C, increase over 14 days to 25C. Secondary at 10C for 6weeks . Fill the south african rum barrel and age for 9 weeks. Bottle condition for 12 months.
Yielded 30L of wort at 1.084 before candy syrup addition. Efficiency 83%.
Notes after fermentation: After 15 days of primary d = 1.021. Secondary in the room at 16C. Yeast look very healthy.
after additional 10 days(17.10.2015), gravity still 1.021. Racked off to a glass carboy, brandy-oak wood added and 0.5g of potassium metabisulfite.

Notes: Very dark and not too bitter, medium body, smooth mouth feel but has strong roast grain finish. I have been brewing this every year in July since 2009. This 15 gallon recipe will scale down to 5 easily. Usually fermented in two separate vessels, blended when completed and kegged. An alternate method I like is to split off 5 gallons when racking for secondary fermentation and rack onto 1 to 2oz of American Oak Chips. (Nice hint of the oak and I prefer to age this method two or three months) |

Using the above assumptions, fermentable quantities adjusted to achieve ~20% Wheat Malt.
After first 24 hrs of fermentation, raise temp. to 78-80 deg F.
Submitted bottle for pre-qualification tasting for 2015 Indian Valley Beer festival homebrew competition. Out of 25 entries, was 1 of 12 chosen to go to the event.
BJCP beer judges comments:
Farmhouse beer, a lot of carbonation, fantastic spicey character, almost too spicey for a Grisette. Doesn't taste table strength. Good heavy minerality. Exemplifes the yeast character well. Mineraly astringent finish. A little chalky. Overall good.
Turned out great! Won 1st place Popular vote and 1st place Judge's vote at 2015 Indian Valley "Brews for Books" Beer Festival. |

Notes: Soaking 2 oz of Heavy toasted oak chips in 10 oz of Capt Morgan Black, spiced rum. will let them soak for 2 months then rack the beer on top and let set for 2 months.
Brewed on 12/11/16 OG 1.084, volume in fermentor is 3 Gallons. not sure if it was mash efficiency as I forgot to take a pre boil reading.
The sample I took for the OG tasted fantastic. pitched yeast at 64 F, set fermentation at 68 F.

Notes: Obtaining the enzyme extract:
after 30 min at 60 C pull and filter 500 ml of wort. Cool it (possibly in an ice bath) and put aside. Use that enzymatic active wort to wake up the yeast and then add it to the beer along with the yeast. It will continue the breakdown of dextrins during primary fermentation.
NOTE: Don't bottle condition this beer unless you you know if the breakdown of dextrins is complete. |

Notes: 45 oz canned pumpkin puree in blender with hot water then strained to produce a juice. This produced approximately 3 quarts of juice which was put into the mash water.
Added 2 habanero peppers in bag at 20 minutes.
1 tbsp pumpkin spice at flameout.
2 habanero tincture in spiced rum towards end of ferment. |
