Notes: 1. Steep grain in 1.5 gallons of water by heating slowly to 155, then shut off the heat steep for 30 minutes.
2. Remove grain from wort.
3. Add the fermentables along with 1/2 the Fuggles & 1/2 the golden hops and continue boil for another 30 minutes.
4. Add Irish Moss continue Rolling boil for 15minutes.
5. Add 1/2 the Fuggles & 1/2 the golden hops and continue boil for another 15 minutes.
6. Add Irish Moss and continue boil for another 15 minutes.
7. Cool the wort down as quickly as possible (I placed the pan (with lid on) in the sink, filled around the pan with ice and cold tap water. Being careful not to allow the ice or water to touch the lid, don't want to contaminate it now).
8. Pitch the yeast in 1/2 cup water & a couple tablespoons of corn sugar just to make sure its going to work. (I used Karo Syrup, didn't' t have dry corn sugar handy)
9. Pour wort into fermenter, use a strainer if you have one to catch the hops.
10. Fill with water (total wort plus water = 5 gallons)
11. Now is the time to get a sample to measure.
12. Pitch the yeast into the fermentor and stir vigorously for a minute or so to infuse with oxygen.
*Step 4 was a mistake. Shouldn't have done it. |

Directions:
Steep crushed specialty grains at 150°F (65.5°C) brewing liquor for 30 minutes. Remove grains, rinse with 170°F (77°C) water, and bring wort up to a boil. Remove kettle from heat and add the extract, stirring to dissolve completely. Commence boil and add hops as detailed above. Chill to 64°F (18°C), pitch yeast, and ferment at 64-68°F (18-20°C).

Notes: Boil the wort with the extracts. Aim for 1.075 gravity when starting boil, 1.082 end of boil.
Yeast is K1-V1116 wine yeast (also ferments maltotriose so can ferment beer with workable attenuation).
Use 2 yeast packets. During the first 2-3 days, gradually add sweet chocolate mead to the fermenter with some yeast nutrient (starting with DAP and progressing to Wyeast blend).
Aerate 1-2 times a day until fermentation starts to subside.
Keep rousing yeast without aeration.
Ferment cold.
Give the yeast some serious time to settle after fermentation, then bottle with priming sugar. |

Successful beer day the only issue was a crack in the Erlenmeyer flask :(

11.11.18 Racked to secondary with Christian. An incredible amount of trub at the bottom! Really astounding. Taste is a subtle spice and pumpkin on the aftertaste; nothing too strong.

Notes: Partial Mash: initial water temp was about 167 degs. 4-quart recommendation for 4-lb of grain was too little water. Maybe use 5-quarts next time? Also, intense manipulation of grain bags to try to spread the too-little liquid resulted in too-low T=145 degsF. So, I added 1-quart of hot water, thereby raising the temp to about 150. Also, next time, rinse grain bags in the brew kettle with clean water at 180-190 degs.
I forgot to update actual AA% of hops before brewing. Citra is default 11% here, but actual was 123%, so total est. IBUs are higher than I wanted- let's see how it tastes! |
