| Notes: After mash, turn off heat and add half of the DME and Nugget hops. At 15 minutes before flameout put cooling coil in pot. At 5 minutes add rest of DMA & other hops. Add 14 pounds of ice & turn on cooling water with hose to bring down to 65 F. Top up to 5 gallons if necessary. Add yeast. Ferment at 66 F until done and let condition for another week at 60 F. Package for 2.5 volumes of CO2. |

Notes: At end of boil, add 0.75 oz. (21 g) NZ Hallertauer, Irish moss, and juniper berries. Turn off heat. Rest for 10 minutes before chilling to 70F for yeast pitching.
The cedary flavors of the juniper berries mellow slightly but become more complex. Tastes like the smell of sitting around a cedar campfire. |

Notes: Add 1 tbsp flour to the boil for added starch for the bacteria to eat during the extended aging.
Primary fermentation in 6.5 gallon bucket, with both clean ale yeast and sour mix added at the same time, then rack (in about a month?) to 5 gallon BB carboy for extended aging. Add French, medium-toast oak cubes (boil in water 10 min first). Add dregs from other lambics to increase complexity.
In the 2018 Dixie Cup competition, the Fruited version of this Lambic (aged on blackberries, raspberries, and blueberries) won gold and the Straight Lambic won silver in the European Sour category.
[Note: in 2019 version, subbed 2.25 lb Dutch pale ale malt for that much of the 3.75 lb Belgian pale ale malt (LHBS was low). Also using ECY Bug County for the yeast and bugs. OG 1.048.] |

Notes: January 2018.
Steep grains in 2 gal water at 160 F for 20 minutes. Sparge grains. Remove from burner, add LME and bring to boil. Add Hallertau hops in hop bag and boil for 45 minutes. Add Huell hops to hop bag and boil 15 minutes (total boil of 60 minutes).
Remove kettle from burner and let cool for 10 minutes. Add wort to primary fermenter, which has 3 gallons cold, sanitized water. Mix to aerate. Let cool to below 80 F, then pitch yeast.
Primary fermentation at approx 66 degrees F. Roused yeast in fermentor at the 1 week mark. Used open fermentation process, covered fermentor with mesh cloth for first few days, then lightly covered fermentor with plastic lid. Skimmed krausen on day 2 and day 3. Nine days in primary fermentation, then into secondary for 24 hours, then bottled with 5.4 oz corn sugar, boiled in 1 pint water.
Use of the Huell Melon hops is an experiment, which was suggested by my LBS, to add a slight profile of melon and tropical fruit. Added the Belgian CaraVienne to add just a bit of a darker, rich color for a winter brew.
Numbers were off just a bit from the auto calc...
OG - 1.048
FG - 1.008
ABV - 5.25%
Bottle condition at 72 F for 1 week, then store at 68 F. |
