Notes: Pretty easy partial mash recipe with no special equipment requirements.
General procedure:
I will mash 2kg of Maris Otter in 6 liters of water and 0.25kg of Caramunich together with 0.25kg of flaked oats in 1.5 liters of water (both at 68°C for 30min, 65°C for 30min). I will then mix the resulting worts (aprox. 7.5 liters), boil it and do the hop additions in a 5 liter volume (the rest will be boiled without hops). 10min before the total boiling time, I will add the Irish moss and the 2kg LDME. I will cool down the mix and transfer it to a plastic fermenter, adding water to a final volume of 19 litres. Pick the yeast (two packets) at around 22°C and leave it in primary for a month (taking density measurements to control the fermentation process). I will ferment at 18°C. No secondary. I will dry hop with the indicated amounts for 5 days, transfer to a bottling bucket and bottle with 6.5gr of table sugar per liter (150gr in total). |

| Notes: Pineapple cream ale - Using lactose, dried pineapple, and 3 hop profiles (Galaxy, El Dorado and Azzaca) to provide varying layers of slight bitterness and tropical notes to this beer as well as accentuate the pineapple fruit forward flavors. Not looking to create an overly sweet finished product just the finishing of a nice smooth cream ale with a slightly more hoppy profile than most by the late additions and dry hopping. |

Notes: used Nottingham yeast for the first time very high flocculation. very quick as well only took 3 weeks from start to finish. made 48 bottles. used the siphon for the second time made it a lot easier but I worry that it may not give the yeast enough oxygen for the priming.
NOT a problem. Nottingham was initially better than US-05 but after a few weeks like US-05.
