| Notes: Cold steeped the pale chocolate malt overnight. Pitched half a pack of mangrove jack hefe yeast 2 65 and let it free rise at ambient temps of 70. Came out great. |

Notes: Ley Lime Rind from ~1 LB of Key limes removed and placed in Rum for 2 weeks to extract flavor. After 2 weeks, Rind and rum added to secondary using spice ball wih fine filter, and allowed to sit for 5 days in secondary.
Sour mash 5 gallons by heating kettle to ~160 and adding DME, stirring until dissolved. Cooled to 100, added lactic acid until pH<=4.5. pitch L. brevis, Cover with cling wrap or tight kettle lid, wrap in towels.
Daily, open the kettle barely enough to test pH, then reseal & heat until kettle is 110F, remove from heat & rewrap in towels. Repeat daily until pH is 3.7.
Once 3.7 is reached, heat up the kettle, separately mash specialty grains in 2 quarts of water at 151F for 30 minutes before adding to kettle, barely reach a boil, add hops immediately, and low boil for 15 minutes, following additions as they come.
Cool to 70 before pitching WL644 (sour (4.2pH) starter Used but not necessary afaik). Check gravity and allow to ferment at 70-73F.
Gravity should stabilize in 4 days at around 1.010. Heat gelatin (heat 1 packet with 0.5 cup water to 160F with 5sec bursts in a microwave), then sprinkle on top of beer. Place bucket in kegerator and drop internal temp to 40F. 24h at 40F should fine the beer sufficiently for clarity.
Rack to secondary & save at least some yeast (for bottling). Hold open spice ball over beer, and pour Rind+Rum mixture through spice ball. Spice ball will catch rind, and rum will go into beer. Place spice ball in beer for 5 days in secondary.
At bottling, heat up 2 cups water & 6.65oz turbinado sugar. Place in bottling bucket, rack beer to bucket smoothly, then bottle immediately.
Store upright at 70F for three weeks. Label one bottle for <today’s date+7 days>, and label another for <today’s date+14 days>. If week 1 Bottle has no carb, shake all bottles (including week 2 bottle), and label a week 3 bottle. If week 1 bottle is ok but week 2 two bottle does not puff, shake all bottles. Repeat as necessary. |

Mash grains for 60 minutes (starting temp 160 F, ending 150 F). Add 8 lbs LME to boiling H2O, return to boil. Add 2 oz Tettnanger hop pellets, boil 30 minutes. Add 1 lb, 12 oz DME and wort from partial mash, return to boil. Add 0.5 oz Saaz pellets, boil 15 minutes. Add Irish moss, boil 15 minutes. Total boil = 60 minutes. Cool in cold water bath. Pitch rehydrated yeast.
Sg = 1081
Rg = 1026 on 1/13/18
Bg = 1024 on 2/19/18
Notes: Fermentation stuck at 1024, despite multiple attempts to kick-start to finish including warming the beer, adding CBC-1 and additional Fermaid K. Resulting beer is a bit too sweet for style. |

10 mai 19:
DENSITÉ INITIALE: 1,55 = 6% ABV . Le logiciel erre avec 8% d'alcool
2 gallons et demi d'eau de source (Labrador et Provigo) ont été utilisés. 8 litres d'eau du robinet ont été utilisés pour le rincage des drâiches. Le mout étai moyennement sucré, peut-être est-ce dû à mon température d'infusion qui approchait le 160' F ?
******J'ai OUBLIÉ DE METTRE DU IRISH MOSS DANS LE MOUT LORS DE L'ÉBULLITION!!!!!!!!!!
-Les premiers 24 heures tout a bien été mais après ce temps une odeur évoquant le décapant s'est emparée du mout et il sentait et goûtait cette «odeur». Myriam en sentant un verre de la bagosse a détecté une odeur de vinaigre! C'est peut-être le Di-acétyle !?!
Toujours est-il que pendant 2 jours j'ai agité énergiquement le mout, que j'ai simplement déposé un tissus bien tendu au-dessus de la cuve (couvercle retiré pour augmenter l'échange gazeux et qu'au 3e jour j'ai mis une nouvelle levure (sèche) dans le mout soit de la Safale Ale Yeast US-05 pour «repartir» la batch.
17 mai:
Mise en tourie: je met les houblons Santiam, Idaho(mozaic) et Mandarina Bavaria dans le fond de la tourie pour un houblonnage à crû et j'ai ajoute un levain de lager de mes bières précédentes.!!! plus 100 g de sucre!
La tourie est pleine à 95% et fermente bien (beau collet de mousse). Le houblon a remonté à la surface et ça sens bon (agrumes).
Le houblon Mozaic est en fait du houblon Idaho
22 mai: après gouté à la bière la veille, je me rends compte que le houblonnage est à son meilleur avec de belle notes de pamplemousse rose. J'ajoute 100 g de sucre au mout et j'embouteille 20 litres de bonnes bière. -La bière a donc fermenté avec deux levures dont l'une de Ale et l'autre de Lager. |
