Notes: Brewed 12/29/16 started at 1:29 PM heated 3 gallons of water to 155 degrees took 27 minutes. heat turned down to 2-3. soaked grain for 30 minutes pulled out the grain brought 3 gallons to boil took 18 minutes. 4-5 to keep boil on. added more Galena hops at the beginning than I wanted. will lower next batch. flameout at 3:51 PM put in 32 degree garage for 2 hours then put yeast in at 5:55 PM. cleanup done at 4:22 PM. yeast looks great after 2 days. will wait 7 days to put into secondary.
Bottled on 1/21/17. accidently put some of the priming LME into batch 16. Made 38 bottles. Conditioning temp was 59.0 F |

Steep grains in 2 gal water at 160 F for 20 minutes. Sparge grains. Remove from burner, add LME and bring to boil. Add Hallertau hops in hop bag and boil for 45 minutes. Add Huell hops to hop bag and boil 15 minutes (total boil of 60 minutes).
Remove kettle from burner and let cool for 10 minutes. Add wort to primary fermenter, which has 3 gallons cold, sanitized water. Mix to aerate. Let cool to below 80 F, then pitch yeast.
Primary fermentation at approx 66 degrees F. Roused yeast in fermentor at the 1 week mark. Used open fermentation process, covered fermentor with mesh cloth for first few days, then lightly covered fermentor with plastic lid. Skimmed krausen on day 2 and day 3. Nine days in primary fermentation, then into secondary for 24 hours, then bottled with 5.4 oz corn sugar, boiled in 1 pint water.
Use of the Huell Melon hops is an experiment, which was suggested by my LBS, to add a slight profile of melon and tropical fruit. Added the Belgian CaraVienne to add just a bit of a darker, rich color for a winter brew.
Numbers were off just a bit from the auto calc...
OG - 1.048
FG - 1.008
ABV - 5.25%
Bottle condition at 72 F for 1 week, then store at 68 F. |

The cedary flavors of the juniper berries mellow slightly but become more complex. Tastes like the smell of sitting around a cedar campfire. |

Notes: Made this with leftover ingredients I had lying around: The last few lbs of a 33 lbs jug of extract, a few oz of several 1 lb bags of grains, and some other extracts that I couldn't remember why I bought. Plus some sugars to dry it out a bit. The hops were a mix of leftovers from bulk orders and partially used packaged. The yeast I recovered from a Belgian triple I had brewing.

| Notes: Pineapple cream ale - Using lactose, dried pineapple, and 3 hop profiles (Galaxy, El Dorado and Azzaca) to provide varying layers of slight bitterness and tropical notes to this beer as well as accentuate the pineapple fruit forward flavors. Not looking to create an overly sweet finished product just the finishing of a nice smooth cream ale with a slightly more hoppy profile than most by the late additions and dry hopping. |
