Notes: Mash In: Heat 3.5 gallons (13 liters) of water to 104°F (40°C). Add all the crushed malts and stir thoroughly to avoid clumps. Allow the temperature to rise to 122°F (50°C) for protein rest. Hold this temperature for 20 minutes.
First Decoction: Take a thick portion of the mash (about one-third) and transfer it to another pot. Heat it up to 158°F (70°C) and hold for 10 minutes. Then, raise the temperature to 168°F (76°C) for mash-out. Return the decoction back to the main mash, raising the temperature to 154°F (68°C) for saccharification rest.
Second Decoction: Take another thick portion of the mash (about one-third) and transfer it to the other pot. Heat it up to 168°F (76°C) for mash-out. Return the decoction back to the main mash, raising the temperature to 162°F (72°C) for the second saccharification rest.
Third Decoction (optional): Repeat the process for a third decoction, if desired, to achieve a rich malt profile.
Lautering: After completing the decoction steps, begin the lautering process. Sparge with 170°F (77°C) water to extract the sugars fully. |

Notes: Mash at 150° F (66° C) until conversion is complete. Lauter and sparge to collect 7.5 gal. (28.5 L) of wort and boil 60 minutes. Do not add Whirlfloc or Irish moss. At flameout, wait until wort cools to 180° F (82° C) to avoid volatizing hop oils. Set timer for 40 minutes and add first hop stand addition. After 10 minutes and 20 minutes, respectively, add the second and third hop stand additions. After the total hop stand of 40 minutes, chill wort to 67° F (19° C), decant starter, pitch yeast, and aerate.
Over the course of the two-week fermentation, ramp the temperature up to 73° F (23° C) to ensure full attenuation. On approximately day five of fermentation, when attenuation has reached about 80 percent, add the first dry hop addition.
(Optionally, you could add a can of thawed pineapple or grapefruit juice concentrate at this point.) Five days later, remove the first dry hop addition, add the second addition, and dry hop for five more days. Carbonate to 2.5 volumes of CO2 (or add 3.75 oz./106 g corn sugar if bottling) and drink fresh. Prost! |

Notes: Varm opp til vannet har nådd 71 grader, ha oppi posen og deretter maltet(kornet). Pass på at den ikke klumper seg. Da vil temperaturen falle til ca. 66 grader. La stå i en time. Prøv å holde temperaturen jevn med å isolere med f.eks. ei dyne.
Når det har gått 60 minutter snørper du sammen posen og lar den renne av seg over kjelen. Sett gjerne ei rist i mellom. Skyll over med skyllevannet.
Sett så varmen på fullt og vent til det starter å koke. Kan fort ta opp til 45 minutter før det starter å koke, kommer an på effekten. Ha oppi humle når det begynner å koke. Følg oppskriften.
Når det har kokt i 45 minutter har du oppi vørterekjøleren (15 før kokeslutt).
Når det har kokt i 60 minutter skrur du av varmen. Kjøl så ned vørteren og før det over til et godt vasket og desinfisert gjæringskar- husk å desinfisere slangen.
Ha oppi gjæra (bare strø den forsiktig over toppen) og risk karet godt i 5 minutter for å få inn oksygen. (Dette er viktig).
Lå stå i to uker, for så å flaske ølet med 6 gram sukker per liter øl. Blandes ut som en sukkerlake i omstikkingskaret. La flaskene stå romtemp i to uker for karbonering før de kjøles og serveres. Nyt! :-) |

Notes: Step by Step
Mill the grains and dough-in targeting a mash temperature of 152°F. Hold the mash at around 152°F for 90 minutes. Collect first runnings into boil kettle and begin heating. Sparge with 21 qt of 166°F water, collecting wort and adding to kettle until the pre-boil kettle volume is around 6.5 gallons. Take hydrometer reading.
The total wort boil time is 60 minutes. Add 3 lbs of Belgian Candi and the bittering hops with 25 minutes remaining in the boil. Add Irish moss and Maltodextrine with 15 minutes left in the boil. Add wort-chiller to the boil with 10 minutes left. Add aroma hops with 5 minutes left in the boil. Chill the wort to 70°F and aerate thoroughly. Pitch one package of Safale-05 into 6.5 gallon fermenting bucket and add airlock.
Ferment at 67°F until the yeast drops clear. At this temperature and with healthy yeast, fermentation should be complete in 10-14 days. Rack to a bottling bucket, add 5 oz. of priming sugar, and bottle. Target a carbonation level of 2.5 volumes.

In Brew Like A Monk, one of the brewers recommended mashing out and sparging no higher than 163. That way you purposely don't denature the enzymes and conversion continues until the boil starts. If you're mashing at 146, you're going for a highly fermentable, dry beer. "In that situation, 163 makes sense. I did it on my last batch. I achieved my best efficiency to date and fermentation went like gangbusters. This wasn't a huge beer (1.046 SG) and I nearly had a blowout with 5 gallons in a 6.5 gallon Ale Pail (the kreusen crept up the airlock but didn't quite go out the top)." |

Notes: 4/25/15: Started 2 liter starter of Wyeast 3711 and a 3 stage starter of WLP644 to be split between the European and American hopped saisons.
5/3/15: Brew day. Added too much water and ended up undershooting the target gravity by .004. This was just as well, as the hop pellets and trub absorbed almost a gallon. It ended up being even less of an issue than I thought, since the melange of yeasts was a monster, reaching 92% apparent attenuation.
5/9/15: Raised the temperature to 72ºF.
5/25/15: Added dry hops late at night.
5/28/15: Bottled with table sugar for 2.4 volumes of CO2. Final gravity 1.002, 4.8% abv.
6/15/15: First tasting. Hazy, straw colored with a soft white head. Fantastic aromas of sauvignon blanc, peaches, pepper, clove, tropical fruit, and a hint of funk. Taste is more of the same, with a small amount of resiny stickiness from the hops. By far the best beer that I've ever brewed. |

Notes: Preheat the oven to 175 degrees. Place the honey in a sanitized, oven-proof saucepan. Heat the honey on the stovetop to 175 degrees. When the honey reaches temperature, cover the pan and place in the oven. Hold at 175 degrees for 2.5 hours. Bring the honey to room temperature by placing it in an ice bath.
Now add the honey to sufficient boiled water to match the starting specific gravity of the beer. For an OG of 1.05, dilute 500g honey in 1L water. |
