Notes: Dough in with roughly 5 gallons of brewing liquor to make a thick mash of approximately 100 °F (38 °C). Let rest for about one hour. At this temperature, an enzyme called phytase will become active and slightly acidify the mash. Then use direct heat and a boiling water infusion of 2 gallon to raise the temperature to approximately 120 °F (49 °C).
This temperature is within the proteolytic conversion range. Rest for 20 minutes. Again, use direct heat and a boiling water infusion of 2 gallon, this time to raise the mash temperature to approximately 150 °F (66 °C). This temperature is within the peak beta-amylase conversion range. Rest for 20 minutes.
Repeat the infusion to raise the mash temperature to approximately160 °F (71 °C). This temperature is within the peak alpha-amylase conversion range. Rest again for 20 minutes. The next infusion brings the mash to the mash-out temperature of about 170 °F (77 °C). Start lautering.
Sparge with the remaining water while maintaining the mash-out temperature. Discontinue the sparge when the kettle gravity reaches about a gravity of roughly 1.042 (10.5 °P). |

Reiterated mash (1/2 grains each mash)

2/3 minerals added to 1st strike + 1st sparge (7.7 gal) with remaining 1/3 added to 2nd mash.
pH was too low for both mashes, so added 0.75g baking soda to 1st mash and 1g to 2nd mash

Notes from Great Fermentations
Suggested Mash Temperature:
A high mash temperature is recommended to create a big Imperial stout with lots of body. We suggest a mash temperature of 155° - 157°F.
Fermentation Schedule:
We recommend a primary fermentation of two to four weeks at 64° - 72° F, and a secondary fermentation for 2 to 4 weeks before bottling or kegging, adding cold steeped coffee, vanilla beans or vanilla bean tincture in the secondary or at packaging time, as desired. This is a big imperial stout that can be aged for an extended period of time, so don’t be shy about setting a few bottles back for several months!
BREWER’S NOTES:
Snark Lord is quite a huge Imperial Stout! As a delicious, complex beer, there are a few special instructions for making sure this
one comes out as close to the commercial version as possible. One pound of a sugar (not included) is added at the last 10 minutes of the boil. We recommend jagggery, a non-centrifugal cane sugar. Jaggery goes by a number of names and can often be found in Indian or Asian grocery stores. However, you might try turbinado sugar or molasses as a substitute. The two included
vanilla beans can be cut open, scraped and added to the boil, soaked in enough vodka to cover for a few weeks then the resulting tincture added into the secondary at bottling time, or both! The 4 oz of included coffee can be cold steeped in about a quart of water by coarsely crushing the coffee beans (a sandwich bag and a rolling pin or coffee cup work well for this), adding
them to the quart of water, and refrigerating for up to 24 hours. You can then strain out the coffee beans and add the cold steeped coffee to the secondary or in the bottling bucket/keg at packaging time. |

Notes: Mark made the starter the usual way. Strike temp was 158, settled at 148 for 30m. Stirred while raising to 158 - took a little while. 30m. at 157. Mashed out at 168.
Sparged with 9g. of 170 deg. water for 90 min? First runnings at 1.074.
Boiled off a Lot of liquid and had a small boil over too, so we added another gallon of filtered water at the whirlpool. Ended up w/ about 10.5g. maybe a bit more in the fermenter, at ~75deg. Waited about 24 hours to pitch the yeast when it was down to 55. Fermented at 50 for 16 days. Gravity was 1.015 at that point so put it up to 68° for a couple days for a diacetyl rest. Then crashed to 35° for 6 days. Kegged on the 11th - bubbled and carbonated that day. FG was at 1.012. Into the fridge for 5 weeks!
Tapped after 5 weeks and it is good! A bit of fusels in the first glass or two. Now 3 weeks in and it is malty and smooth and lovely. Great carbonation - total winner!!
Absolutely fantastic to the end of the keg! Malty and refreshing, good balance - don't think I'd change anything!
