Notes: The name turns out to be misleading on this IPA. Although it is a very tasty beer, there is no hint of "dankness" - more of a tropical fruit aroma, fairly strong bitterness, and a bit too much sweetness from the C-60. |

Now we're changing up the malt bill quite a bit; No cara malt and using 50% brownmalt together with 50% pale ale malt. The rest is identical and aiming for similar degrees of plato; 13°P. Expected color is very dark since we're using 50% of the roasted malt, however it is very lightly roasted, only about 65 Lovibond (Carafa ~400 and Chocolate ~300).
Mash Ph = 6.0 (higher than optimal 5.2-5.5)
Gravity preboil 11.5°P (lower than #1 - #3)
Gravity post boil 13.5°P
Post boil volume 18.5L
Final volume in fermenter 16L

Sacch rest at 150F for 60-75 min. FWH get added at 170F as the boil begins. Boil. Cut flame, add Whirlpool hops, swirl, cover and let stand for 40 minutes. Chill, pitch and ferment at 65F. Cold crash after 10 or so days to 60F. Transfer and dry hop at 65F. Double dry hop: Add first DH and swirl every 12 hours for two days. . .add second dry hop and swirl every 12 hours for three days. . .total dry hop time of 5 days. 21 days in bottles carbed to 2.0 (sorry I just can't do 2.5). lol |

Notes: An Irish Red. Based on my family history, hailing from an Irish immigrant mother who landed in the states in mid-twentieth century.
While the family is not known for making a commercial ale the recipe its self is true to spirit from the period of the late late 1700's.
This will have a very easy smooth taste, very balanced. Not too sweet not too bitter.
I would suggest a 10 day fermentation period followed by a 2 week secondary. I bottle mine so I can share with everyone so I use 3/4 cup of table sugar boiled in 1 1/2 cup filtered water. I put that in the bottom of the bottling bucket so it gets evenly distributed in the wort with out adding in extra oxygen.
