came out great and went fast. took to a cookout got positive reviews. this should be my flagship IPA since its one of the best ive made and I developed the recipe myself!
has a bit of influence from cold ipa, i rely on pilsner malt for this beer for a smoother more flavorful malt backbone that still sets the stage for the hops without getting in the way. Sometimes the corn in the malt bill can come out corny or else make me think its corny when its not so i switched to cane sugar here. Could possibly try rice instead.
And as noted above, the hop bill is a custom blend of 5 of the C family hops.

revamping recipe for a rebrew! c5 will be equal parts centennial cascade chinook columbus and citra. will use 2oz of each hop mixed together into a bowl and redistributed according to the recipe. will use a little warrior for bittering. adding a little c20 for color and body as well as carapils for head.
todo: water chemistry. yeast. could prob use rva 101 or even hothead.

Update 5/16/19
I accidentally added the wheat to another beer. Thewheat planned for this didnt make it in. Boosting up the corn sugar to 1lb to make up some abv.
update 2/12/19:
changing this for sort of a west coast double ipa spin off. the first beer was pretty good, good hop flavor and bitterness, good everyday beer. this one would be more of a west coast style hop bomb. also going for clear beer (both in appearance and body) this time so axed the oats and london yeast in leui of corn sugar and american ale yeast (may use american ale ii since i have some). will need to cold crash properly as well. also thinking of a different spin off of this in NEIPA style, should be elsewhere in the archives....

kinda made up on brew night.
C5 hop is a combo of cascade centennial citra columbus and chinook. i had more on hand of cascade and centennial so i did 1.2 centennial and 1.3 cascade , 1oz everything else for a total of 6 oz used. calculated the weighted average of the AA, hopefully that checks out.
using reused london ale yeast from a previous batch amber lamps. the yeast was never taken out of the fermentor. (taking half of the yeast to use on a barleywine im also brewing tonight) |

Notes: BIAB; Single infusion rest at 150 F for 60-75 min. Remove bag, squeeze, then dunk sparge into 1.475 gal water at 170 in 3 gal kettle. Rest for 10 min, then remove bag, squeeze, then add these second runnings back to first runnings in 5 gal kettle and fire up to a 120 minute boil. Add hops as noted (can sub any noble hops for the Nobility). Remove some wort into small saucepan and dissolve molasses in it, then add back into boil around 10 minute mark. If your gravity is lower than expected, can add either more molasses, or DME or table sugar.
After about 0.47 gal absorption to grain, should have preboil volume of 4.0 gal; after 0.6 gal boil-off rate for 2 hrs, should have 2.8 gal into fermentor. After about 0.05 gal absorption to hops, and 0.25 gal to trub, should have 2.5 gal final beer to keg or bottle (use fresh yeast if bottling for high abv and age after lagering).
Ferment at 50 F for two weeks, then slowly raise to 60 for a Diacetyl rest for another week or two. Lager for 2-4 months, and age this one to get better in 8-12 months. |

Notes: Yeast calls for a mix of Fermentis SafAle T-58 and S-33. I may just go with Imperial Triple Double - Westmalle Yeast.
Original recipe calls for a three step mash at 129 for 20 minutes, 145 for 50 minutes and 163 for 20 minutes. Then do a mash out. I plan to do a simple infusion at 149 for 75 minutes.
Add 1 lb Belgian Candi Syrup at 10 minutes and be sure to turn off burner while mixing it in. Options: Mix sugar with a bit of boiled water, cool and add a couple days into fermentation or just add at same time as Candi Syrup.
Chill to 68, pitch yeast. After 3 days allow it to free rise as high as 86. Ferment for at least 2 weeks until TG is reached, then drop temp to 59 and add dry hops for a week. Transfer to keg and condition cold for 3-4 weeks.
Carbonate to 3 volumes. |
