Notes: 1. Bring 3 gallons of water to 160 degrees.
2. Steep grains for 45 mins at 155 degrees.
3. Dunk grain bag and lift out. Place on strainer to drain.
4. Slowly pour 1 gallon of 170 degree water over the grain bag and allow to almost completely drain the water.
5. Top up to 4 gallons of water as needed and bring to boil.
6. Remove from heat and add extract
7. Bring to a boil
8. Add 1 oz. Mosaic Hops 60 mins
9. Add .5 oz. Mosaic Hops 30 mins
10. Add 1 oz. Mosaic Hops 20 mins
11. Add 1 Whirlfloc tablet and .5 tsp Yeast Nutrient at 10 mins
12. Add .5 oz. Mosaic Hops 0 mins
13. Chill to 70 degrees
14. Top up to 5.25 gallons in fermenter as needed.
15. Check OG
15. Pitch yeast
16. Transfer to secondary vessel after 7 days when active fermentation has ceased.
16. Add 2 oz. Mosaic Hops dry hop
17. Secondary ferment for 7-14 days
18. Keg/Bottle and condition 2 weeks

Notes: Fermented at 83° with Imperial Kveiking (1/2 pitch in each 5 gal)
Dry hops: 2oz Wakatu, 2oz Motueka, and 2oz Nelson Sauvin dry hops after 2 weeks, racked after 6 days dry hopping. Absolutely wonderful, tropical and lime flavors.
"Pale" 5 gal. No dry hops, drank much more like a pale ale. |

Notes: 2.5L starter of SDSY the night before, in an effort to get 400B total cells. Pitched half and saved half in a jar in the fridge.
Should be 90-100 ppm each chloride and sulfate
6 gallon mash + 2 gallon sparge left 7 gallons for boil. Post boil we had 6 gallons left which was about .6 less than we were expecting.
We took about 5+ gallons from the brew kettle which included a pretty decent amount of trub. I do not know if having 7.75 gal pre boil + 6.6 post boil would have helped here because I don't know how to get more trub to settle below the outtake valve of the brew kettle.
Whirlpool took place from about 170-160 instead of 185 as noted. Added .5 of CTZ at 5min since we didn't have anything else to do with that half ounce.
Original gravity was about 1.062 or 1.063 which I believe indicates slightly higher efficiency. We were aiming for 65% efficiency and 1.060 og but ended up a bit higher, around 67% efficiency
Recipe originally called for 3 oz acidulated malt and 11 oz premium caramalt. Changing to .25lb acidulated and .75lb caramalt for online order.

Notes: Pitch the yeast at 65°F (18°C) and ramp up the temperature to 75°F (24°C) over 48 hours. The brewery says, “Bursting with aromas of passion fruit, mango, and peach, our imperial saison is brewed using New Zealand Rakau hops. Combined with notes of pepper and ginger produced by our house yeast strain, Tropic King has a unique flavor that has gained it a loyal following. Serve at 50°F (10°C) in a tulip glass.” Gordon adds, “We account for whirlpool isomerization at the brewery, so homebrewers may want to increase the 60-minute bittering addition.” |
