Notes: We messed up by adding too much where without adding rice hulls. The mash all stuck together allowing much our sparge water to go right down the sides. This left us with a lower original gravity than expected: 1.060
The souring process proved difficult with ph test strips. We couldn't get an accurate reading on our acidity and I don't think our beer turned out as sour as we wanted. (we only soured it for 18 hours)
Mash the grains at 155°F (68°C) for 45 minutes. Vorlauf until your runnings are clear, then run off into the kettle. Sparge the grains to obtain 6 gallons (23 l) of wort—or more, depending on your evaporation rate. Boil for 60 minutes. For the lactose, remove the kettle from the heat, stir in the lactose, return the kettle to the heat, and bring it back to a boil for the remaining 10 minutes.
Do not introduce the whirlpool hops at the first whirlpool, as they will inhibit the Lactobacillus blend. Pre-acidify the wort to a pH of 4.5, then chill the wort to 95°F (35°C) and pitch the Lactobacillus blend. There’s no need to hold the heat at 95°F (35°C), but don’t allow it to drop much below 75°F (24°C). After a pH of 3.2–3.3 is obtained, reheat the wort to 180°F (82°C) and follow the hopping schedule for the second whirlpool. After the whirlpool, rest for 15 minutes, then chill the wort to slightly below fermentation temperature, about 66°F (19°C). Aerate the wort and pitch the British Ale yeast.
Hold fermentation at 68°F (20°C) for 24 hours once signs of fermentation are visible. Allow the temperature to rise to 70°F (21°C) during the remainder of fermentation, following the dry-hop schedule. After adding the vanilla and blackberries, allow the berries to ferment out at 70°F (21°C).

Notes: Place the grains in a muslin sack and then steep the grains in 1.5 gallons of water at 160°F (71.1°C) for 30 minutes. Take out the grains and hold them over the kettle allowing the remaining water to drip back into the kettle. Do not squeeze the grains. Squeezing the grains could result in bitter tannin extraction. Top up your brew kettle to 3 gallons and bring to a rolling boil (If possible, top up to 7.7 gallons and conduct a full boil). Stir in the malt extracts and bring kettle to a rolling boil. Boil for 30 minutes. Add 1.6 oz of Kent Goldings hops and allow to boil for 50 more minutes. Be careful when adding hops as you may encounter a boil over during the first hop addition. With 10 minutes left in the boil, add 0.5 oz of Kent Goldings. Allow the wort to cool and then pitch the yeast around 65° F (18° C). Ferment around 65° F (18° C). When fermentation is finished, carbonate the beer to approximately 2 to 2.5 volumes of CO2. A period of cold conditioning for several months will improve this beer. |

Peel 4 medium grapefruits and puree. Add whole peel and fruit puree to secondary for 1 month, add hops for the last 7 days.

Add 8-10 oak cubes soaked in tequila (soak in 4 oz for 2 weeks). Add oak cubes to secondary and let sit for 4 weeks. Dry hop for last week of secondary.

Notes: Amount of spice decreased from 5g to 3g as there was a bitterness from the orange that was too obvious. Might consider increasing again if the bitterness mellows with bottle conditioning.
White Labs note that the beer might be sweet with this yeast and a different yeast can be pitched after 75% fermentation. My experience differs however, the last batch had an apparent attenuation of 86%. |

First brewed 30/08/2015. Want to try push mash temp up and see whether improves mash efficiency.
MASH NOTES.
Only getting around 60-63% efficiency. Have tried all manner of things to bump up. Looked through old notes and remembered that even with a pre Tun heat up, I still need an extra 2 deg C on top of brewers friend calcs. Last 3 brews all around 64-65 deg C mash temp on purpose.(wanted drier beers then but efficiency suffered) This time have bumped up mash temp extra 2 deg aiming for 67-68 deg C over 90 mins. Extra 2 deg C last thing to test before changing to smaller esky cooler Tun.
Ambient temp 18 deg C (end of winter) 30/08/2015
I have tun insulated with cardboard and wrapped in blanket.
Single Infusion.

Strike (brewers Friend) 21L @ 77deg C.

Mash temp rise to 68deg C haven't worked. Hit 1.076 but 22L. This is 63% which is my standard efficiency. I added 2L of fresh water to bring it down to 1.070 may add another 1L to make 1.067. Brewer's Friend calcs at 63% efficiency. Had my usual 34 liter to start boil. Left a bit more in pot so not as much trube went in, but still 6L off. Not sure why the extra boil off today.
The extra 2L of water isn't something I like to do, but ABV would be too high for 1 packet of dry yeast. Extra water will bring with some oxygen to aid yeast. Should it attenuate as per all my other brews 80%+ 1.010 i'll end up with an imperial-ish 7.8% 1.012 finish 7.6% down side is I wanted a hoppy plain-ish IPA lucky the extra IBU's are in it as it will still be a balanced beer with a 1.012+ finish.
FG 1.016 added extra water.ABV 6.69%
