Notes: 6/7/2016 used simpson golden promise, Malz pale wheat malt, and Briess Caravienne.
pH 5.2 in 5 Gallons of RO water at 165 for infusion mash.
Added brewing salts to the boil kettle approx. 7.5 gallons.
6.5 g of gypsum, 2g Calcium Chloride, 1.5 g Epsom Salt, 0.8 g NaCl.
3200 ml 1.040 starter for 24 hour with 2.5 month old yeast. Decant 50% since a low follucant yeast. went from 1.056 ( missed low on my numbers) to 1.014 in 48 hours. Conan/Pacman yeast is fast. But no blow-off. Kruszen was only 3" high. So different than WLP001. Which blows-off on me at 36 hour mark and ferments for 5 days.
Dry hopped 0n 6-17-16
Bottled on 6-21-16
Nice Dry Hop aroma
Taste was okay but needed more hop flavor
Next brew need to do longer hop stand or move some hops to the 10 and 5 min end of boil with some of the whirlpool hops
Taste is still drinkable 0n 09/20/16. Still big dry hop aroma. I surprised this has not dropped out yet. Taste is still okay yeast chalk bite flavor note has grown. Cant believe the long last hop aroma. Bright hop flavor just not strong enough flavor as in the nose.
Need to add only 5.5 gallons of brewing salts to boil. Might be a source of chalky taste |

Notes: I split the batch is two:
I made concentrate from apple juice for the first half: 2 gallons frozen, then thawed to let just the apple run off, totaling 3 qts concentrate. Keg and fridge it so the apple doesn't ferment. Tastes amazing! Apple-Wheat beer.
The second half I did a secondary with 5lb of strawberries. Let the strawberries ferment. |

Notes: Actual SRM appears to be about 25-26, Compare with Kulshun Red Cap both in color and taste. Mine is less IBU than the Kulshan.
Actual Measurements:
BG : 1.086
OG: 1.052
FG: 1.011
Primary fermentation was quick, 3-4 days in 5 gallon plastic carboy. Transferred to secondary 5 gallon plastic carboy on day 8. Cleared by day 16. Used a 5 gallon carboy as bottling bucket, to which bottling sugar/water had been previously added.
Loss from transfer amounted to 10 pints. so actual bottling was 30 pint bottles.
Allowed 15 days conditioning at 66F. Very drinkable, nice head that dissipates in about a minute. I suggest using more hops to increase the IBU as it is very light. |

Notes: OC Fair 2016 - Honorable Mention - rated 35.6 (category 28b)
brew day - 06/17/2015
yeast starter - 1 liter at 100 grams
Mash Efficiency
2 Row - 37 x 7 / 6 = 43
WW - 37 x 2 / 6 = 12.3
FW - 36 x 1 / 6 = 6
Total - 61.43
PPG = 1.030*6 / 10 = 18 (target 30ppg)
Efficiency = 18 / 61.43 = 30% - did a 75 min mash at 149 - not sure why the efficiency was so low.
Post Boil OG - hit target 1.055 - raised dextrose to 1lb from 1/2lb
appearance - thick white foam head (wheat proteins), active carbonation
appearance - pale golden straw to slight sunburst (bw honey), clear with slight cloudy (bottled unfiltered), sediment in bottom / last pour
aroma - earth, spice, slight fruit and floral
flavor yeast - complexity from Brett and slight sour - typical farmhouse with tempered funk
flavor bitter hops - willamette - peppery herbaceous with notes of floral / fruit
flavor / Aroma hops - willamette -fragrant, spicey, woody, herbal aroma - slight citrus to earthy, woody flavor - some fruit and floral notes
overall - an ode to the early American immigrants and Midwest farmers - seemingly simple from the outside but complex if you choose to go deeper. A bold pioneering spirit (spice and slight sour) for enjoying the freedom once expressed on America’s plains. Dry and sessional for a functional humid thirst quenching experience but as with history develops a richer complexity with age. It is born of hands from the earth (wood, herbal, floral, wheat) labored with authentic materials (leather, metallic) and finished with a mysterious and wild funkiness. Overall an easily approachable beer for new or old community bonding with enough depth to start a conversation.

Notes: 1. Used center burner to bring it to 170F but it took too long; moved it to outer burner and it shot up to 200F pretty quick. Took off towels/insulation and at the end of 80m, it was down to 160F. Not sure how this'll affect the flavor.
2. Soaked medium toast oak chips in bourbon overnight, then decided to add them, along with vanilla pods, to the secondary. (6 Jun)
1SG: 1.062
2SG: 1.027
FSG: 1.025 (4.86%)
Calculated amount of 45% bourbon to add; 2.75 gal of 4.86% beer + 1 cup 45% bourbon = 5.7% beer. |
