Notes: For yeast starter, there are two options. Most manageable involves 3 steps from 1L (4 oz DME), 2L (7 oz), and 4L (15 oz) for 810B cells on 630B req'd assuming 100% viability.
A big bold beer that was an experiment in getting the Rye to cut through, and it was very successful! Has a spicy flavor that many have described when tasting a rye beer. Will definitely be brewing again once the supply runs low. Slightly cloudy due to dry hopping but color is copper-orange with a nice long lasting head.
I entered this beer into the Alternative Grain/Experimental category (barleywine base beer) at the 2018 Ohio State Fair Homebrew competition (BJCP Sponsored). Results: Scored 4th in category. Judges felt it needed more late hop and aroma hop additions to cut through the Rye and to make it consistent with an American barleywine. |

Notes: Actual SRM appears to be about 25-26, Compare with Kulshun Red Cap both in color and taste. Mine is less IBU than the Kulshan.
Actual Measurements:
BG : 1.086
OG: 1.052
FG: 1.011
Primary fermentation was quick, 3-4 days in 5 gallon plastic carboy. Transferred to secondary 5 gallon plastic carboy on day 8. Cleared by day 16. Used a 5 gallon carboy as bottling bucket, to which bottling sugar/water had been previously added.
Loss from transfer amounted to 10 pints. so actual bottling was 30 pint bottles.
Allowed 15 days conditioning at 66F. Very drinkable, nice head that dissipates in about a minute. I suggest using more hops to increase the IBU as it is very light. |

Notes: Make 1L yeast starter at least 48 hrs prior to brew day.
Taste: Not a lot of maltyness, slight bitterness, not too much of a fan of the hop flavors.
Color: Color is perfect for a blonde ale - not a lot of sediment
Smell: Nise crisp smell with a slight florally aroma.
Things to Change: Change base malt from Golden Promise to Maris Otter. Try switching the order of the hops, or switching altogether. |

Notes: Add habanero to boil, mango and jalapeno to secondary 1 day left of fermentation, stay for 5 days before bottling. Mango needs to be frozen to break cell walls (releases fruit juices better). |
