Notes: pitch at 70*
light straw yellow in color. very active fermentation blew the air lock off and produced too much dyacityl.
revisit 4 weeks later: pulled the keg out of the cooler and let sit for 4 weeks. yeast re activated and cleaned up the dyacityl. I should have roused the yeast cake during fermentation to clean up the dyacityl
maybe add 8oz Munich to get a little more orangey hew |

Notes: Adjusted Grain bill 26 NOV 2020 to compensate for my high efficiency
Directions:
Note: This recipe is for a 6.5 gallon batch, with 5 gallons intended to remain after hop loss. To make this Pliny the Elder clone, protein rest 122 for 30 minutes, mash grains at 151-152°F (66-67°C) for an hour or until starch conversion is complete. Mash out at 170°F (77°C) and sparge. Collect 8 gallons (30 L) of runoff, stir in dextrose and bring to a boil. Add hops as indicated in the recipe. After a 90 minute boil, chill wort to 67°F (19°C) and transfer to a fermenter. Pitch two packages of yeast or a yeast starter and aerate well. Ferment at 67°F (19°C) until fermentation activity subsides, then rack to secondary. Add first set of dry hops on top of the racked beer and age 7-9 days, then add the second set. Age five more days then bottle or keg. |

· Wyeast 1056 American Ale. Optimum temp: 60°-72°F
MASH SCHEDULE: SINGLE INFUSION
If you are new to all-grain brewing, we suggest starting with 1.5
quarts of water per pound of grain for the strike water volume. This
mash thickness can be adjusted for future brews as you become
more comfortable with your equipment.
· Saccharification Rest: 154° F for 60 minutes
· Mashout: 170° F for 10 minutes (optional) - to raise the temperature for mashout, gently apply direct heat while stirring well, or add near boiling water until the target temperature is reached.
Prepare sparge water in your hot liquor tank at a rate of 2 quarts
per pound of grain in the recipe, and perform a fly sparge until
you have gathered your pre-boil volume (6-7 gallons) in your boil
kettle. The sparge should take about an hour for optimal extraction
efficiency. You should end up with extra sparge water in your hot
liquor tank, you can use this hot water for cleaning later on.
This recipe calls for a 60 minute boil duration.
· Add 1 oz Chinook hops at the beginning of the boil.
· Add 0.5 oz Cascade and 0.5 oz Centennial hops with 2 minutes remaining in the boil.
· Add 0.5 oz Cascade and 0.5 oz Centennial hops with 0 minutes remaining in the boil. |

Notes: Boiled 15 min longer than planned due to adding Super Moss late. That also caused another quart to boil off thus missing my target of 11G into the primaries.
BU/GU of 1.08 is the top end for this style according to BYO. |
