Notes: Salt additions as below, into 10 Liters of RO Water provide the target profile which is a slightly shifted version of Light Colored and Hoppy.
Mash fraction is 7 liters, the sparge is 3 liters.
Being as the quantities are, small, 10% w/v stock solutions or suspensions were prepared, and volumes of the stock will be added to water to attain the desired water chemistry. (note 10% Nacl tends to exhibit microbial growth after a few weeks, so make fresh)
Gypsum: 2 g CaSO4•2H2O ~0.4 tsp
Epsom salt: 0.25 g MgSO4•7H2O ~0.1 tsp
Table salt: 0.25 g NaCl ~0.0 tsp
Calcium chloride: 0.75 g CaCl2•2H2O ~0.2 tsp
Brew Date 6/26/18 this boil was done in a double boiler system and the actual temperature for the 75 minutes was 204 F

Brewed this for homebrew club December 2015 meeting. This beer was reasonably good. There is a bit of a alcohol taste. A strong hop profile that lingers. If I was to do it again I think I might change up the Columbus hops. |

Notes: Heat 3.5 gals. of water to 170° F, pour grains into steeping bag and add to water for 15 minutes.
Remove grains and add malt extract and 1 oz. of Cascade hops.
When wort begins to boil, add another 1 oz. of Cascade hops.
Boil 55 minutes and add Willamette and East Kent Goldings hops.
Boil 5 more minutes.
Total boil is 60 minutes.
Cool wort and transfer to fermenter. Top off to 5 gals. Add yeast and ferment 10 to 14 days. Bottle or transfer to secondary when fermentation is complete. Prime with corn sugar. Drink and enjoy in moderation! |

Notes:
1)Steep grains
2)500g of LDM and chinook boil for 30 mins.
3)Bring wort off heat and steep 25g of nelsons for 30mins.
4)Add remanining 1.5 kg of LME FV and then add wort.
5)Add cool water to wort to 23 litres to make temp of around 21 to 22 C and pitch yeast allow to cool to 18 c over 24 hours.
Dry hop remanining 25g Nelsons after foam crash around day 3/4 and bottle when steady FG reading after 2 days the same. |

This is the perfect beer to compliment the big hoppy beers I usually brew - malty, slightly sweet, easy drinking. The pale chocolate malts adds just a hint of roast and complexity (and makes it a pretty color!) |
