Notes: Fermented around 22-24°C.
Really like what Philly sour achived. Added extra tablesugar into boil - its said to produce more lactic acid. After primary fermentation I took a sample and it was suprisingly sour(in a good way) and already were good on its own. Added 1000g of frozen raspberry for the flavour. I was expecting to get extra tartness/sourness from the raspberry and maybe some more when yeast eats the sugars. And it did go down few point on FG. But for my suprise it actually left some residual sweetness and body.
Cold crushed. Bottled with hopes that priming sugar makes it more sour. 5 days later.. It does start sour on the tounge but immidently feel rasberry with soft sweetnes and i even get hints of vanilla in the end. It is pleasant and balanced but i was aiming for kinda only sour beer.
Yes need one week before final toughts.
Ca t remember why i chose those hops, but they arent stars of the show so it doesnt really matter.
Maybe reduce the amount of cara clair and munich and more 2 row to fight the extra sweetness. Also mash lower.
I forgot coriander ;facepalm;.
Overall it was okay and i would like to improve it on the notes i made. |

Notes: Goal: smooth, full, complex stout without the bitterness of highly roasted malts or the sweetness of too much caramel/crystal malt. Initial taste from OG pull was incredible! Lots of coffee and chocolate notes, very smooth, no bitterness. Expecting more character and balance to come out post fermentation and conditioning.
0.35oz orange peel @5 min (McCormmick's Dried Valencia)
Added the brown sugar at end of boil
Due to volume constraint, mashed with 7.5 gal, then "sparged" BIAB with half gal (170 deg) in bucket. Started boil with 7 gal.
Collected 1L of pre-boiled wort, boiled separately for 5 min, used as yeast starter (1.052, since pre-boil and brown sugar not added yet). Pitched 24 hrs later.
Ferment at 65 for 3 days, then raise to 68-70 for 4 weeks. No secondary. Bottle at 4 weeks, bottle condition for 3-4 months.
Pilsner malt & white wheat were leftovers from a previous brew. Recommend replacing with extra 1 lb maris otter or victory. |

- Roast the cocoa nibs in the oven at 350° for 5 min at a time tasting until you get the chocolate flavor you want. "No roast, no flavor"
- The longer this sits the better it gets. Initially it will taste like a cup of cold coffee. After several months all the flavors come out, it mellows and is an amazing brew. Credit to my son for the ingredients. |

Starter av 2 pakker WLP001; fordelt på 2 startere á 1,6 liter (SG 1.040)

Sekundær:
Trekk 15 gram eikechips i 2,5 dl bourbon i 2-3 dager.
Trekk Sumatra Gayo Mountain i 2,5 dl kokt, avkjølt vann i kjøleskap.
Sil kaffe og tøm bourbon og eikechips i sekundærkar. Hell så over fra primærkar og lagre på ca 13 grader i 2-6 måneder.
